La fábrica elabora regularmente varias cervezas entre las que se encuentra esta Kriek. Sin duda se trata de la Lambic con fruta más conocida. Una cerveza hecha con una mezcla de lambics y guindas de cereza, exactamente 200 g por litro de cerveza. Después de dejar infusionando la fruta en la lambic durante dos o tres meses se mezcla con una lambic de un año, que es la que aporta los azúcares necesarios para la fermentación secundaria en la botella.
Recomendamos adentrarse en el mundo de las lambics con frutas ya que se trata una experiencia a caballo entre la cerveza tradicional y, en cierta forma, el vino natural. Además, maridan excepcionalmente tanto con carne como con pescado, así como con quesos u otros alimentos grasos.

Cerveza elaborada a partir de la mezcla de diversas cervezas lambics y guindas, a razón de 200 g de cerezas por litro de cerveza. De sabor ligeramente ácido a frutos rojos complementado con sutiles sabores de almendra. Kriek saca su máxima «frutosidad» cuando se bebe joven. Con la edad, el lambic pierde cierto cácter fresco y afrutado, para dar paso a una cerveza con más cuerpo, algo ácida.
Maridaje: ideal como aperitivo, y con ensaladas o quesos suaves.
Consejo: Bien conservada (protegida de la luz y en lugar fresco y seco) puede evolucionar durante décadas.
Curiosidad: las guindas están certificadas como orgánicas. La fruta se mezcla con cervezas lambic que tienen una edad media de 20 meses, siendo la proporción de 200 g de fruta por litro de cerveza. Dado que las guindas tienen un sabor muy pronunciado, es necesario seleccionar una lambic que tenga suficiente carácter para que sea una buena combinación con la fruta. Después de remojar durante dos o tres meses, la lambic ha extraído todos los colores, fragancias y sabores de las guindas. En ese momento se mezcla con lambic de un año, que aporta los azúcares necesarios para la fermentación secundaria en botella. Las cervezas Cantillon se pueden denominar en términos de añadas. Las condiciones climáticas prevalecientes tienen un gran impacto en la madurez y la calidad de la fruta, y es por eso que el sabor de las cervezas a base de frutas de la cervecería diferirá ligeramente de un año a otro.
