Das Rosé de Gambrinus ist ein mit Himbeeren gebrauter Frucht-Lambik, auch Framboise genannt. Dafür werden ungefähr 200g Himbeeren pro Liter Lambik für 1–2 Monate auf 20 Monate altem Lambik mazeriert und anschließend mit einem Drittel jungem Lambik in Flaschen zur Nachgärung gefüllt. Das so entstandene Lambik ist wundervoll fruchtig, leicht, aber gleichzeitig komplex. Bei guter Lagerung, was durchaus mehrere Jahre möglich ist, entwickelt das Rosé de Gambrinus einen noch komplexeren Charakter. Eine Sherry-artige Komplexität und ein noch trockener Körper werden so zu einem ganz besonderen Bier-Erlebnis.

Beer with a slightly acidic, fruity and fragrant taste. Just like kriek, the “fruitiness” of Rosé de Gambrinus is at its best when the beer is young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.
Cantillon only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.
