Cantillon – Iris 75. Si abrimos la puerta de la rue Gheude 56 entraremos en una fábrica de cerveza en la que el tiempo parece congelado desde el año 1900. Momento en el que la familia Van Roy-Cantillon fundó Cantillon . Actualmente una de los estandartes del estilo y el movimiento Lambic en Bruselas. En ella veremos los mismos contenedores de cobre rojo, barriles de más de 100 años y paredes de botellas. Como dice Jean-Pierre, ha vivido muchos momentos, pero si le llegan a decir hace 30 años que habría que pedir cita para poder visitar su fábrica, posiblemente hubiera soltado una estridente carcajada. Las cervezas Lambic fueron prácticamente olvidadas casi durante todo el siglo XX. Hasta que el movimiento craft las volvió a poner en el lugar que se merecían.

Cantillon – Iris es una rara avis dentro del surtido de cervezas de Cantillon. Se trata de una cerveza de añada o producción anual que se diferencia por su composición. En vez de tener una mezcla de maltas de cebada y de trigo en esta se utiliza únicamente maltas pale, sin la presencia de las segundas. Cabe destacar también que utiliza lúpulos frescos que le aportan un amargor muy particular y que después de un envejecimiento de dos años en barrica se vuelve a lupulizar antes del embotellado. El resultado es una cerveza de 5% bastante diferente a una Lambic tradicional. Posee en color más ambarino y en nariz destacan las notas florales del lúpulo acompañado de notas cítricas. En boca la parte vinosa y acética comparte espacio con la presencia del lúpulo.

This is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste. The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities. After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called “cold hopping”, gives the beer a more intense savour and makes the smell and the taste more bitter. Iris is brewed only once every season and all the beers come from the same brewing. This is why the beer is dated. The second fermentation is obtained by adding liquor. Although it is a spontaneous fermentation beer, the Iris is very different from the Lambic. The amber colour and the bitter and slightly caramelized taste make it a complex beer.

To zupełnie oryginalne piwo, które w przeciwieństwie do innych produktów Browaru nie jest warzone z 35% pszenicy. Iris, które jest produkowane tylko z jęczmienia jasnego typu ale, zachowuje typowy smak spontanicznej fermentacji, kompleksowe aromaty i winny smak.

Chmielenie jest również inne. Lambic jest produkowany z 100% suszonych chmieli, natomiast do Iris używamy 50% suszonych chmieli i 50% świeżych chmieli. Po dwóch latach w beczce, Iris przechodzi drugie chmielenie świeżymi chmielami dwa tygodnie przed butelkowaniem. Ta technika, zwana „zimnym chmieleniem”, nadaje piwu intensywniejszy smak i sprawia, że zapach i smak stają się bardziej gorzkie. Druga fermentacja jest uzyskiwana poprzez dodanie likieru.

Iris di Cantillon è un raro lambic “fuori stile” brassato a fermentazione spontanea con 100% malto Pale (niente frumento), maturato circa due anni in botte e caratterizzata da un profilo unico in cui l’acidità elegante incontra una decisa vena amaricante da luppolo: in bollitura è impiegato un mix 50/50 di luppoli Hallertau freschi e maturi, quindi prima dell’imbottigliamento avviene un cold/dry-hopping con luppolo fresco (Saaz) che intensifica aromi e amaro. Nel bicchiere è ambrata con riflessi rame e schiuma fine; al naso emergono note floreali ed erbacee su toni di cantina, legno e agrumi; al palato l’acidità viva e la secchezza tipiche Cantillon si fondono con un amaro erbaceo pulito, con sfumature vinose e di scorza di pompelmo per una chiusura lunga e asciutta. Il nome richiama l’iris palustre, simbolo di Bruxelles, omaggiato anche in etichetta.

Lo stabilimento, inaugurato nel 1900 e oggi inglobato nel quartiere multiculturale di Anderlecht, è un vero e proprio museo – aperto alle visite e meta ambitissima dagli appassionati di tutto il mondo – che ha mantenuto quasi intatta la strumentazione produttiva di inizio Novecento, al pari di pratiche materiali dal carattere ancestrale.

La peculiarità del Lambic risiede nel processo fermentativo: anziché inoculare artificialmente lieviti selezionati, i mastri birrai lasciano raffreddare il mosto di birra (dalla buona presenza di frumento) in grandi vasche aperte – tradizionalmente poste nei sottotetti del birrificio, ambienti ventilati ed esposti alla specifico ecosistema microbico locale. Il mosto sarà dunque “infettato” da tutta una serie di microrganismi naturali (lieviti selvaggi e batteri) che innescheranno una fermentazione spontanea, che proseguirà poi per mesi (o anche lunghi anni) in botti di rovere secondo dinamiche non direttamente controllabili dal birraio.

Quando nel 1998, per festeggiare i primi vent’anni di vita del Musée Bruxellois de la Gueuze, il leggendario Jean-Pierre Van Roy – prima di lasciare le redini al figlio Jean – volle presentare una birra originale che legasse il passato al futuro, l’ispirazione arrivò dalla forte nostalgia per una birra che aveva amato sin da ragazzo, quella che incarnava lo spirito di Bruxelles, la sempre rimpianta Spéciale della birreria di Léon Aerts – chiusa nel 1963.

Nacque così la Iris, un’inedita birra prodotta una sola volta l’anno, che segue la filosofia Cantillon della fermentazione spontanea – proponendo dunque un profilo organolettico selvaggio (sella di cavallo, muffa, aia) e di cantina (note vinose e legnose) accompagnato da un sorso dalla sottile e variegata acidità – ma utilizzando ingredienti inusuali: solo malto Pale (che conferisce un colore leggermente ambrato) e luppolo utilizzato in parti uguali sia essiccato (il suranné di tre anni, in bollitura) sia fresco (in dry hopping con varietà nobile Saaz in fiore, due settimane prima dell’imbottigliamento). Maturata per due anni in botte, riceverà una seconda fermentazione in bottiglia grazie all’aggiunta di liqueur d’éxpédition. Al naso e al palato sentori intensi e complessi, con una tonalità amarognola e i sentori aciduli e pungenti tipici del Lambic, si accompagnano da note maltate che ammorbidiscono le spigolosità al palato, creando un’armonica convivenza.

Dopo due anni di invecchiamento in botte viene aggiunto luppolo con la tecnica del "cold hopping", un sacco di lino viene immerso nella birra per due settimane conferendole sapori ed aromi più decisi ed amari. Al naso ed al palato i sentori sono intensi e complessi, si percepiscono le note amare del luppolo ben in equilibrio con i sentori aciduli e pungenti tipici del Lambic.
