Cantillon Iris is a singular expression of a Lambic, deviating from tradition by utilizing 100% Pale Ale malt and a unique hopping regimen. The absence of wheat and the use of kiln-dried malt yield a deep amber hue and a sturdier, bready foundation. Spontaneous fermentation imparts a profound Brussels funk—notes of wet hay and horse blanket—complemented by a vinous, cider-like complexity. The interplay of 50% fresh and 50% dried hops, followed by a cold-hopping finish, introduces a firm bitterness and a bright, resinous aromatic edge that cuts through the superb lactic acidity. It finishes bone-dry with a lingering, earthy, and herbal punch.
Appearance. Deep copper to amber (8-12 SRM) due to the Pale Ale malt. Generally clear to slightly hazy. Minimal off-white head with low retention and sparse lacing, typical of high-acidity spontaneous fermentations.
Aroma. High intensity with dominant Brettanomyces funk: leathery, horsey, and earthy hay. Distinctive hop presence from the cold hopping provides herbal, peppery, and slightly resinous notes. A subtle bready malt backbone is present, alongside pronounced lactic tartness with vinous, green apple, and citrus peel esters.
Taste. Assertive lactic sourness balanced by a firm, persistent hop bitterness unusual for the style. Initial flavors of tart white grape and lemon pith transition into a bready, toasted malt mid-palate. Complex fermentation character features barnyard funk and oak tannin. Bone-dry finish with a lingering herbal hop aftertaste and sharp, clean acidity.
Mouthfeel. Medium-light body with low to moderate carbonation. Notable puckering acidity provides a crisp, refreshing quality. Very slight astringency from hop tannins and oak contact. Negligible alcohol warmth.
