As Oude Gueuze, também chamadas de “champanhe das cervejas”, devido à sua carbonatação mas especialmente por serem edições limitadas, vão buscar o seu carácter ao método de produção ancestral: um blend não adoçado de duas, ou mais, cervejas 100% lambic. Neste caso, trata-se de um blend entre uma lambic envelhecida três anos em barricas de madeira e uma cerveja lambic mais recente, que garante a fermentação em garrafa. As diferentes lambic são cuidadosamente selecionadas pelo mestre-cervejeiro para um resultado sensorial perfeito em termos de cor, aroma, paladar e sensação na boca. Oude Gueuze é uma denominação protegida por lei.
As cervejas Timmermans são produzidas em Itterbeek, na mais antiga cervejeira lambic ainda em atividade e respeitando uma tradição com mais de 300 anos.
No último século, 3 gerações de “The Finest Drinks Company” proporcionaram a todos os apreciadores uma maravilhosa viagem pelo mundo das cervejas. Cerveza estilo Lambic, de fermentación espontánea. Se trata de una mezcla de Lambic envejecido, que, una vez que ha madurado a lo largo de tres años en barricas de madera, se mezcla con Lambic joven para generar una fermentación espontánea en botella. Los diferentes Lambic son cuidadosamente seleccionados por el maestro cervecero con el fin de obtener el gusto perfecto. Tras su producción, la Timmermans Oude Gueuze, refermentada durante cuatro meses en botella, aguanta 20 años sin perder un ápice de su calidad. Gusto ácido y sutil, en el que el Lambic nunca cae en lo agrio sino que armoniza un aroma salvaje y fresco.
Maridaje: ideal como aperitivo, y con ensaladas o quesos suaves.
Consejo: Verter lentamente en una copa de cristal tipo “flauta”, sin perturbar el sedimento de levadura que quedará en la botella. Cerveza no filtrada. Bien conservada (protegida de la luz y en lugar fresco y seco) puede evolucionar durante décadas.
