This traditional Gueuze offers a masterfully balanced sensory experience, blending one-year and three-year lambics matured in oak barrels. Often called the champagne of beers, its profile is defined by a complex, wild fermentation character driven by Brettanomyces, presenting as a tapestry of barnyard funk, hay, and leather. High effervescence carries vibrant aromas of red apple and citrus zest, supported by a subtle, grainy wheat malt foundation. On the palate, a refined tartness interacts with light oak tannins, creating a sophisticated sensory depth. The finish is remarkably crisp and bone-dry, leaving a lingering, refreshing acidity and a signature touch of woody, wild authenticity.
Appearance. Deep golden color (approximately 6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and lively, persistent effervescence.
Aroma. Moderately high intensity with complex funkiness featuring notes of leather, horse blanket, and musty hay. Bright fruit character of red apple and citrus peel is present, supported by a light bready wheat malt and a subtle hint of aged oak.
Taste. Sharply sour but well-balanced initial impression. The flavor profile mirrors the aroma with layers of citrus acidity and funky Brettanomyces character.
