Doppelbock 6.7 º 24 IBU
This quintessential Doppelbock pours a deep mahogany with brilliant ruby highlights and a dense, tan head. The aroma is a complex tapestry of rich Munich malt, offering toasted bread, hazelnuts, and a unique hint of cedar. On the palate, it delivers a profound malt heartiness characterized by dark chocolate and coffee tones that intensify toward the finish. Despite its strength, it remains remarkably elegant and less cloying than others of its style, balanced by a clean fermentation profile and a smooth, full-bodied mouthfeel. It showcases the expertise of Bavarian brewing tradition, leaning into deeply developed Maillard products while maintaining a surprisingly attenuated and clean lager finish.
Appearance. Deep mahogany to nearly black color (approx. 25 SRM) with brilliant ruby highlights. Features a large, creamy, tan-colored head with exceptional persistence and dense lacing.
Aroma. High intensity of rich, toasted Munich malt and Maillard products. Distinctive notes of toasted nuts, hints of cedar, and dark fruit leather. No hop aroma; clean fermentation profile with a very light, well-integrated alcohol presence.
Taste. Initial impression of rich, bready malt fullness. Mid-palate reveals toasted crusts and a developing coffee character that becomes more dominant in the aftertaste. Malt-forward balance with moderately low bitterness. Finishes clean and surprisingly dry for such a hearty beer, lacking the cloying sweetness common to the style.
Mouthfeel. Medium-full to full body with a smooth, velvety texture. Moderate-low carbonation. Notable but gentle alcohol warmth without any harshness or astringency.

"A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous medals."

Ayinger Celebrator Doppelbock (ABV 6.7%) is a rich, dark elixir with cascading layers of malt complexity balanced by elegant hops. Notes of toffee, caramel, graceful dark malt roastiness, and the essence of barley. Lager fermentation leads to clean flavors and pinpoint conditioning. Semi-dry finish. 11.2 oz bottle. History Doppelbocks (“double bocks”) were probably first brewed in the 17th century by monks in Bavaria – a stronger version of bock beers that originated in Einbeck, Germany. Doppelbocks are usually rich, malty lagers; usually dark-colored; the names often end with the suffix “-ator.” Ayinger Celebrator is probably little changed from the doppelbock first brewed at Ayinger in 1878; Ayinger’s doppelbock was once called “Fortunator” but this global classic is called “Celebrator” around the world now. Serving Suggestion Pastries and desserts, roast goose, cured ham, smoked duck, wild turkey, filet with Dijon sauce, chanterelles, Tournedos Rossini, Châteaubriand. Enjoy with a fine cigar after dinner. Serve in stemmed tumbler at 50 °F. Brewery Information: Ayinger Brewery: Aying, Germany Nestled near the Alps, in the 1200-year-old Bavarian village of Aying, Ayinger Brewery has been brewing beer infused with Bavarian beer culture and the rich brewing heritage of the region for more than 140 years. The award-winning Ayinger Brewery, or Privatbrauerei Aying for the German speakers, was founded in 1878. Adhering to Rheinhisgebot, the German Beer Purity Law of 1516 means beer from Aying is brewed only from pure ingredients. Ayinger combines strictly traditional ingredients sourced from surrounding farms, with high-tech automation to ensure sustainable practices throughout the brewing process. German beer has a reputation to uphold, and Ayinger Brewery sets the benchmark for excellence. As one of the most advanced breweries in Europe, their unmatched flavors come from six generations of brewing skill and art. Ayinger regularly places first in every category entered in the World Beer Championships. Brauerei Aying also boasts gold medals from the European Beer Star, the Helsinki Beer Fest, the Stockholm Beer & Whiskey Festival, the Calgary Brewfest, and the Deutsche Landwirtschaftsgesellschaft (German Agricultural Society).
