Sour Ale 8.5 º 20 IBU
Petrus Red is a masterful Fruit Beer that bridges the gap between a rich Belgian Dubbel and a sharp, wood-aged sour. This deep ruby-red ale showcases a vibrant macerated cherry profile, harmonizing succulent stone fruit sweetness with the bright, lactic acidity of the Petrus Aged Pale component. Having matured for 24 months in oak foudres, the aged portion contributes sophisticated tannins and a dry, refreshing counterpoint to the decadent dark malts. Expect a layered sensory experience where jammy fruit, toasted caramel, and a whisper of wild funk culminate in a complex, warming finish that celebrates the heritage of Flemish blending.
Appearance. Brilliantly clear, deep ruby red to garnet. Pours with a thick, creamy, pale pink to tan-colored head that exhibits excellent retention and leaves fine lacing on the glass.
Aroma. High intensity aroma dominated by fresh and jammy sour cherries. Secondary layers reveal rich Dubbel characteristics of toasted bread, caramel, and dark dried fruits like raisins. A distinct woody note from the 24-month oak aging provides vanilla and earthy depth, complemented by a sharp, clean lactic tartness and subtle spicy yeast esters.
Taste. An immediate burst of sweet, juicy cherries is quickly balanced by a refreshing, vinous acidity. The malt profile offers complex flavors of toffee and crusty brown bread. Hop bitterness is very low, as the structural balance is driven by the interplay of fruit sugars and the tartness of the aged beer. The finish is long and complex, fading from fruit sweetness into a dry, woody, and slightly acidic aftertaste.
Mouthfeel. Medium-full body with a lush, velvety texture. Carbonation is moderate to high, providing a prickly sensation that enhances the tartness. A noticeable but well-integrated alcohol warmth reflects the 8.5% strength, accompanied by a slight tannic dryness from the cherry skins and oak.
