La cerveza lambic es una de las más antiguas del mundo. Según algunos, también la mejor, aunque su acidez característica no agrade a todos los paladares. Para compensar esta acidez, algunos decidieron añadirle azúcar. Así nació la faro. Añadir jarabe de azúcar a la cerveza lambic fue una revelación en la época de Bruegel. (Algunos incluso sostienen que sin la faro, Bruegel se habría quedado sin inspiración y habría seguido siendo un pintor aficionado común y corriente cuyos lienzos ni siquiera habrían podido venderse en un mercadillo). Hasta el siglo XIX, la faro estaba muy extendida en la región de Bruselas. Allí se asociaba con frecuencia al folclore y el líquido divino fluía como el agua. Luego la faro cayó en el olvido. No fue hasta 1978 cuando nuestra familia la volvió a poner en el centro de atención. O centre Senne, como prefiera. La faro, que se aprecia especialmente después del esfuerzo físico, no solo es fácil de beber, sino que es un placer beberla.

A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.

Aby zrównoważyć tę kwasowość, niektórzy postanowili dodać do niej cukier. Tak narodził się Faro-Lambic. Dodanie syropu cukrowego do lambic było rewelacją w czasach Bruegla. (Niektórzy twierdzą nawet, że bez Faro-Lambic, Bruegel byłby pozbawiony inspiracji i pozostałby zwykłym malarzem-amatorem, którego płótna nie mogłyby nawet zostać sprzedane na pchlim targu.) Do XIX wieku Faro-Lambic był bardzo powszechne w regionie Brukseli. Tam często kojarzył się z nim folklor, a boski płyn płynął jak woda. Wtedy Faro-Lambic popadł w zapomnienie. Dopiero w 1978 roku nasza rodzina wróciła na scenę. Albo wyśrodkuj Senne, jak wolisz. Szczególnie ceniony po wysiłku fizycznym Faro-Lambic jest nie tylko łatwy do picia, ale sprawia to przyjemność.
