En primer momento hicimos un taller de elaboración en la Cervesera Artesana de Barcelona y a partir de ahí hemos ido conociendo otras personas, como por ejemplo Asociación Humulus Lupulus, Steve Huxley y una larga lista de personas con las cuales hemos ido compartiendo conocimientos. Se podría decir que hemos aprendido en la calle.
La familia de cervezas que elaboramos es de Alta Fermentación (Ale), es un estilo de elaboración a la inglesa porque son del estilo de cerveza que nos gustan.
El obrador es una sala de elaboración de unos 40 m2 y una bodega adyacente para la maduración de las cervezas. La sala de elaboración consta de una caldera de agua caliente, una de maceración y otra de cocción la cual funciona por gravedad. A partir de ahí disponemos de tres fermentadores donde alojamos elaboraciones de 500 litros más o menos. En la misma sala embotellamos y llevamos las botellas a la bodega donde estarán entre 3 o 4 semanas antes de salir a la calle.
Y esta ubicado en una masia donde en siglo pasado elaboraban vinos. Esta rodeada de campos de cebada y viñas. Con un paisaje bonito y agradable, no es la típica fabrica donde solo se trabaja, también se vive, ya que es nuestra casa.
Las maltas que utilizamos son: Malta Pale en su variedad Maris Otter, crystal, chocolate, trigo y cebada tostada sin maltear todas provienen de Reino Unido. Utilizamos maltas de fuera ya que elaboramos una familia de cerveza, en las cuales este tipo de maltas son más afines, y a nivel estatal no se encuentran. Los lúpulos utilizados proceden del Reino Unido, Estados Unidos y Alemania, por las mismas razones que en la malta. Estos son: Challenger, Cascade, Fuggles y Northern Brewer. El challenger nos da amargor. Fuggles y cascade nos aportan sabor y aroma. Northern brewer lo utilizamos para amargor, sabor y aroma.
El Ayuntamento de Mediona y Ales Agullons organitzan conjuntamente la muestra anual de cerveza artesana, que lleva por nombre: Mostra de cervesa artesana de Mediona, se han celebrado ya 7 ediciones con un éxito de público aclaparador, y con mas de 30 productores por edición de todo el estado y algunos internacionales.
