Waarom een nieuwe brouwerij beginnen in een land als België, waar brouwerijen al overal zijn? In het begin van de jaren ’80 maakten zij – “bierliefhebbers”- zij zorgen over de massale verdwijning van vele kleine en middelgrote brouwerijen in België. Gezien het feit dat zij de brouwerijen waren die in staat waren om de beste bieren te maken. Het was ook verontrustend dat in die periode veel uitstekende, bittere bieren werden gezoet om aan de eisen van de massaconsumptie te voldoen. Ervan uitgaande dat mensen de bittere smaak niet meer lekker vonden. De realiteit was dat nieuwe technieken het mogelijk maakten om hopextracten te gebruiken in plaats van hopbloemen, wat een goedkopere productie mogelijk maakte. Ook waren de industriële fabrikanten van mening dat de smaak van bier neutraal moest zijn om de massa te bereiken (in combinatie met massamarketing). Deze ontwikkelingen in de bierindustrie hebben ertoe geleid dat ze actie hebben ondernomen om te bewijzen dat kwaliteit alleen kan worden gegarandeerd met de beste grondstoffen en met respect voor traditionele methoden.
