This unique Winter Seasonal Beer from Brouwerij De Ranke defies tradition by trading heavy sweetness for a bold, refreshing bitterness. A base of Pale and Munich malts provides a toasty backbone, while Caramel malt adds a deep amber hue and subtle richness. The hop profile is assertive and complex, featuring the spicy, floral elegance of Hallertau alongside the earthy, dark fruit nuances of Brewers Gold. A distinct addition of liquorice weaves through the profile, adding a semi-spiced complexity that lingers into a notably long, dry finish. It is a sophisticated, hop-forward take on holiday warmth, balancing 7% ABV strength with a clean, biting character.
Appearance. Deep amber to copper (SRM 12-14); brilliant clarity with a dense, persistent off-white head that leaves significant lacing on the glass.
Aroma. Moderate-high intensity; toasted bread and light caramel malt notes are complemented by spicy and herbal hop aromas. A subtle, dark woody spice from the licorice interacts with light pear-like yeast esters.
Taste. Initial toasted malt sweetness is quickly overtaken by a firm, assertive bitterness uncommon for the style. Flavors of spicy hops and a hint of blackcurrant are prominent. The licorice provides a woody, semi-sweet spice that persists into a very long, bracingly bitter and dry finish.
Mouthfeel. Medium body with a crisp, moderate-high carbonation that enhances the perceived bitterness. A light, pleasant alcohol warmth is present but well-integrated; low astringency.
