Chimay Triple remonta a 1966. Mas foi lançada em garrafa de 75cl para comemorar o 500º aniversário do principado de Chimay em 1986. E é por isso que em garrafa de 75 cl também é conhecida como Chimay “Cinq cents” (significa 500).

La Chimay Tripel, conosciuta anche come Chimay Blanche, è una birra trappista chiara in stile Tripel, con una gradazione alcolica dell’8%. Пивоварня Bières de Chimay была основана в аббатстве Scourmont в бельгийском муниципалитете Chimay в 1862 году. Вода для пива берется из чистейшего источника, расположенного внутри монастырских стен. Отфильтрованные твердые частицы пивного сусла перерабатываются в корм для скота, в том числе для коров, которые производят молоко для сыров Chimay. После ферментации пиво транспортируется из монастыря к месту розлива в 12 км от монастыря. После бутилирования пиво "возвращается" в монастырь, где проходит реферментацию в бутылках в течение трех недель перед отправкой в продажу. В 1988 году пивоварня была реконструирована, и сегодня новые мощности позволяют производить более 12 мегалитров пива ежегодно.
