Dunkelweizen 5.8 º 13 IBU
This classic Dunkles Weissbier presents a deep, cloudy amber hue, radiating the wheaty freshness and dark malt complexity famously noted by Michael Jackson. The sensory profile is defined by a sophisticated interplay between toasted bread crust and caramel malt notes against the signature fermentation character of banana and clove. Ayinger’s execution offers a remarkably rich, sparkling effervescence that carries a malty, fruity aroma. The palate is full-bodied yet balanced, showcasing a soft wheat doughiness and a gentle touch of noble bitterness that ensures a clean, refreshing finish. It is a harmonious marriage of yeasty complexity and dark malt depth.
Appearance. Deep copper to mahogany brown (SRM 16-22); massive, thick, moussy, and long-lasting off-white head with dense lacing; hazy with a visible yeast cloudiness.
Aroma. Moderate to high intensity; prominent banana esters and spicy clove phenols; rich bready and toasted malt aroma with hints of caramel and nutty wheat; low floral hop presence; no sulfur or diacetyl.
Taste. Initial impression of malty sweetness featuring toasted bread and caramel; well-balanced banana and clove yeast character; low bitterness (approx. 13 IBU); soft, doughy wheat flavor; finish is relatively dry and clean with a lingering bready malt and spice aftertaste.
Mouthfeel. Medium-full body with a creamy, fluffy texture; high carbonation providing a lively, effervescent sparkle; very light, well-integrated alcohol warmth; no astringency.
