Ayinger Bräuweisse is an iconic Weissbier that defines the style's elegance through a refined fermentation profile. It presents a hallmark yeast-cloudy appearance topped by a massive, moussy head. The aroma is dominated by a distinct banana character and soft, flowery yeast notes, supported by the doughy richness of wheat and Pilsner malt. Taste. Initial impression is full-bodied and soft, featuring prominent banana and mild clove. A light, typical wheat flavor provides a bready foundation alongside grainy-sweet malt. Hop bitterness is very low and barely detectable, leading to a well-rounded, flavorful palate and a relatively dry, refreshing finish.
Mouthfeel. Medium body with a creamy, fluffy fullness. Very high carbonation provides a lively, effervescent sparkle. Exceptionally smooth and mild with no perceptible alcohol warmth or astringency.
