Ayinger Bräuweisse is an iconic Weissbier that defines the style's elegance through a refined fermentation profile. It presents a hallmark yeast-cloudy appearance topped by a massive, moussy head. The aroma is dominated by a distinct banana character and soft, flowery yeast notes, supported by the doughy richness of wheat and Pilsner malt. On the palate, it is remarkably soft and full-bodied, balancing mild bready sweetness with a subtle, champagne-like sparkle. High carbonation ensures a refreshing, lively finish where hop bitterness remains scarcely detectable, allowing the complex interplay of esters and bready malt to remain the centerpiece of this classic Bavarian wheat beer.
Appearance. Pale gold (4 SRM) and unfiltered with a persistent yeast-cloudy haze. Renders a very thick, moussy, and long-lasting white head with excellent lacing.
Aroma. High intensity of banana esters and a refined, flowery top-fermented yeast character. Supported by moderate bready and doughy wheat aromas with a light, grainy Pilsner malt sweetness. Low clove-like phenols are present but secondary to the fruit.
Taste. Initial impression is full-bodied and soft, featuring prominent banana and mild clove. A light, typical wheat flavor provides a bready foundation alongside grainy-sweet malt. Hop bitterness is very low and barely detectable, leading to a well-rounded, flavorful palate and a relatively dry, refreshing finish.
Mouthfeel. Medium body with a creamy, fluffy fullness. Very high carbonation provides a lively, effervescent sparkle. Exceptionally smooth and mild with no perceptible alcohol warmth or astringency.
