Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. This specific Oude Geuze was blended with lambikken from five different barrels and from six different brews. The oldest lambikken were brewed at the beginning of the 17|18 season. The weighted average age of the blend at bottling was 19 months and consists of a very large part of two year old lambikken, brewed by both Brouwerij 3 Fonteinen, Boon and Lindemans.

Für den Klassiker, der schlichten Oude Geuze in unverfeinerter Form, werden sechs verschiedene Lambics miteinander verheiratet. Die einzelnen Basisbiere stammen aus drei bekannten Brauereien und wurden in sechs unterschiedlichen Holzfässern gelagert. Etwa 80 % des Sudes wurden drei oder vier Jahre gelagert, die restlichen 20 % sind jüngeres Bier. Die Oude Geuze wurde weder pasteurisiert, noch filtriert und lagert nach Abfüllung noch ein weiteres Jahr, in der es eine weitere Fermentation durchläuft. Dieser letzte Schritt der Veredelung verleiht der Spezialität eine champagnergleiche Spritzigkeit und rundet den Charakter bis zur Perfektion ab.
Das Meisterwerk fließt in zart bewölktem Kupfergold ins Glas und krönt sich mit einem Schleier weichen, gebrochen weißen Schaums. Ein feines Aroma von sonnenverwöhnten Äpfeln, reifen Steinfrüchten, spritzigem Weißwein, Zitrone, Leder und würzigem Eichenholz zieht sich wie ein roter Faden durch Duft und Geschmack. Die Geuze hat eine elegante Säure, die wunderbar mit der vollmundigen Aromatik harmoniert.
