3 Fonteinen es una cervecería belga situada en Beersel, cerca de Bruselas en la conocida como “Zona Lambic”. Todo empezó cuando Gastón Debelder y su esposa Raymonde Dedoncker, progenitores de Armand, actual alma mater de la cervecería, se instalaron en Beersel. Ahí se hicieron cargo de una tasca en la que históricamente se mezclaban lámbicas.

El negocio lo heredaron sus dos hijos, Guido se hizo cargo del restaurante y Armand de la cervecería. Aunque empezaron como blenders en 1999 sacaron su primera lambic realizada de manera íntegra en sus instalaciones. Un accidente tecnológico dio al traste con el crecimiento y consolidación de la cervecería en el 2009. Se perdió gran parte de la producción en botella pero Armand, con una idea de genio, supo sacar provecho a parte de lambic recalentada haciendo un destilado con el nombre de Armand’s Spirit. Gracias a eso pudo reflotar la empresa y volver a poner a 3 Fonteinen en el top del reconocimiento internacional.

Elaborada con una base 60% malta de cebada y un 40% de trigo no malteado y fermentada espontáneamente con la microflora de la zona. Como toda geuze auténtica, la clave reside en las proporciones exactas de la mezcla de lambics de 1, 2 y 3 años en barrica de roble. Después del blend esta Oude Geuze sin filtrar ni pasteurizar envejece en la botella un mínimo de 6 meses. El resultado es una delicada Geuze en donde se armonizan los cítricos, la fruta de hueso, lo floral y los ahumados de la madera. Una genuina muestra del patrimonio cultural del Valle del Zenne.

37.5cl. 6,2%. Oude Geuze. Drie Fonteinen empezó siendo una cafetería en 1887 en la que también se mezclaban geuzes de productores externos para embotellar la propia. Poco a poco fueron creciendo estableciendo un restaurante propio hasta llegar a instalar su propia cocina cervecera en 1998. La Cuvèe Armand&Gaston fue lanzada al mercado por primera vez en 2016 con una mezcla de gueuzes de elaboración propia. La acidez es generosa en el inicio, dejando paso después a los matices afrutados. Al segundo trago comenzamos a notar un agradable dulzor de malta. Un vicio para los amantes del estilo.

Cerveza estilo Lambic, de fermentación espontánea. Corresponde a la mezcla de la temporada 2018/2019. Elaborada a partir de cervezas tipo lambic envejecidas y maduradas en 6 barriles diferentes, que se han elaborado a partir del mosto de 6 cervezas diferentes. 60 % malta de cebada y 40% maltas de trigo. Envejecida en barriles de roble, es una cerveza en constante evolución. Su proceso natural de fermentación continua en la botella. Aroma afrutado, a manzanas y limón. De espuma muy ligera. De agradable acidez, que se suaviza a medida que madura.

Maridaje: ideal como aperitivo, y con ensaladas o quesos suaves.

Curiosidad: Botella serigrafiada.

Consejo: Verter lentamente en una copa de cristal tipo “flauta”, sin perturbar el sedimento de levadura que quedará en la botella. Cerveza no filtrada. Bien conservada (protegida de la luz y en lugar fresco y seco) puede evolucionar durante décadas.

Non filtrata e non pastorizzata, viene poi affinata e rifermentata per almeno un anno dopo l'assemblaggio, in bottiglie da champagne vista la forte pressione che si sviluppa all'interno delle stesse. La rifermentazione in bottiglia conferisce altresì a questa Geuze la sua famosa effervescenza, tipica dello champagne. Fermentazione spontanea, paziente maturazione in botti di rovere e continua evoluzione dell'ecosistema in bottiglia si traducono in una birra naturale distintamente complessa ed elegante. Non esistono due imbottigliamenti uguali poiché ci sono diverse variabili durante il brassaggio, come ad esempio, dimensioni e forme differenti delle botti, diverse proporzioni del Lambic invecchiato nella miscela, etc. Se conservata correttamente, la 3 Fonteinen Oude Geuze può essere invecchiata per diversi decenni e il suo profilo cambierà in funzione dell'età della bottiglia. Gli aromi e i sapori si evolveranno da note vibranti di agrumi freschi, pelle di salame, cuoio, cantina, aia, stalla, aceto di mela e toni erbacei a un bouquet altrettanto acetico e citrico ma molto più morbido, con suggestioni legnose, di sughero, frutta a nocciolo mentre la birra continua a svilupparsi con il tempo. Corpo medio, elevata saturazione, mouthfeel pungente, aspro ed astringente. Dotata di una incredibilmente scorrevolezza e di una bevibilità impressionante, chiude con un finale estremamente secco e ripulente. Assaggia, assapora e goditi la vera arte brassicola.

75cl. 6,2%. Oude Geuze. Drie Fonteinen empezó siendo una cafetería en 1887 en la que también se mezclaban geuzes de productores externos para embotellar la propia. Poco a poco fueron creciendo estableciendo un restaurante propio hasta llegar a instalar su propia cocina cervecera en 1998. La Cuvèe Armand&Gaston fue lanzada al mercado por primera vez en 2016 con una mezcla de gueuzes de elaboración propia. La acidez es generosa en el inicio, dejando paso después a los matices afrutados. Al segundo trago comenzamos a notar un agradable dulzor de malta. Un vicio para los amantes del estilo.
