For this Oude Geuze, we blended lambikken of six different brews and five different barrels, of which three were freshly emptied Oloroso Sherry barrels. More than 75% of the lambik has aged in such barrels. We used young lambik, more than 60% of two-year old lambik and almost 20% of four-year old lambik. This way, the weighed average age of this blend upon bottling is more than 27 months. Of the 3 Fonteinen lambikken (+80%), virtually all were brewed with local cereals from our cereal collective.

3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! This particular blend of Oude Geuze consists of lambikken originating from six different barrels and eleven brews. Almost 10% of the blend consists of four year-old lambikken and it has almost 40% three year-old lambikken. This brings the weighted average age at bottling time to around 20 months. While blending, we added some Acacia honey as well.
Of the lambikken brewed by 3 Fonteinen, already 75% was brewed with local Pajot grown cereals and one third with Belgian hops.

Brouwerij 3 FonteinenOriginally established in 1887 as a café and geuzestekerij - a place where old and new lambics are blended to create geuze - 3 Fonteinen was acquired by Gaston De Belder in 1953, who later expanded it to include a restaurant. In 1982, ownership was passed down to Gaston's sons Armand and Guido.In 1998, the company purchased a brewery installation and began incorporating lambic produced by other breweries, such as Boon, Girardin, and Lindemans, in addition to their own lambic, to make their geuze. 3 Fonteinen is now among the limited number of remaining geuzestekerijen.
