Hommage è un omaggio a Gaston Debelder, il fondatore di 3Fonteinen.

Viene ottenuto dalla macerazione di ciliegie e lamponi in grandi quantità (rispettivamente 220 e 780 grammi per litro di birra), per almeno quattro mesi in un Lambic giovane e da un successivo blend con diversi altri Lambic. Al naso è intenso e complesso con netti sentori di frutta rossa e frutti di bosco, marzapane, vaniglia, e le note di cuoio, cantina e animali donate da batteri lattici e brettanomyces.

In bocca è acido, delicatamente carbonato e secco e ripropone pienamente le note già avvertite al naso.

HISTORIA 3 FONTEINEN
Fue fundada en el año 1887 como un local que funcionaba como café y a la vez productor de lambics. Donde elaboraban gueuze mediante la mezcla de lambics jóvenes y añejadas que eran adquiridas de otras cerveceras. La compañía fue adquirida en 1953 por Gastón De Belder, amplió el negocio con un restaurante, al comienzo de la década de los 80 falleció y la empresa la heredaron sus hijos Armand y Guido. Armand se quedó al mando de la fábrica. Continuo con la tradición de la mezcla de lambics, actualmente ya no sólo mezcla, también elabora sus propias cervezas. Boon, Girardin, Lindemas y Cantillon son las cerveceras que les proporcionan los lambics para poder hacer la mezcla y obtener sus geuze.

3 Fonteinen Hommage es el resultado de la maceración de guindas y frambuesas enteras recolectadas a mano en lambic jóvenes durante al menos cuatro meses, en una proporción de 760 a 800 gramos de frambuesas y de 200 a 240 gramos de guindas por litro de lambic. Esta lambic de fruta se vuelve a mezclar con más lambic para obtener una intensidad mínima del 35% de fruta. Hommage es una cerveza lambic de frambuesa con cuerpo, con un intenso aroma a frutos del bosque de color rojo oscuro. Esta lambic sin filtrar ni pasteurizar es totalmente natural sin jugos, jarabes ni azúcares artificiales añadidos.

Este particular Hommage ha macerado durante 4 meses y medio y la intensidad de fruta final es de 350 gramos de fruta por litro. Mientras se mezcla, se agregó miel autóctona. Las lambics utilizadas provienen de 6 barriles diferentes y 5 cervezas diferentes.

3 Fonteinen Hommage es el resultado de la maceración de frambuesas (orgánicas) y cerezas enteras recogidas a mano en lambic tradicional, y con fermentación en botella. Fruta natural, sin zumo, almíbares ni azúcares añadidos. Sin filtrar y sin pasteurizar.

HISTORIA 3 FONTEINEN
Fue fundada en el año 1887 como un local que funcionaba como café y a la vez productor de lambics. Donde elaboraban gueuze mediante la mezcla de lambics jóvenes y añejadas que eran adquiridas de otras cerveceras. La compañía fue adquirida en 1953 por Gastón De Belder, amplió el negocio con un restaurante, al comienzo de la década de los 80 falleció y la empresa la heredaron sus hijos Armand y Guido. Armand se quedó al mando de la fábrica. Continuo con la tradición de la mezcla de lambics, actualmente ya no sólo mezcla, también elabora sus propias cervezas. Boon, Girardin, Lindemas y Cantillon son las cerveceras que les proporcionan los lambics para poder hacer la mezcla y obtener sus geuze.

Questo Fruit Lambic è il risultato di un processo che coinvolge il maceramento di lamponi e ciliegie in una Lambic, con proporzioni approssimative di 760/800 grammi di lamponi e 200/240 grammi di ciliegie per litro di birra. Successivamente, avviene un blend con lambic novello per ottenere una percentuale di frutta del 35%. Il risultato è un’esplosione di intense note di frutta rossa e di bosco, accompagnate dal caratteristico e pronunciato aroma funky di casa 3 Fonteinen. Non manca l’acidità, che si fa sentire in modo intenso ma piacevole, contribuendo a bilanciare e arricchire l’esperienza gustativa complessiva.
