De verhouding van het fruit is bijzonder intens, met 760-800 gram frambozen en 200-240 gram krieken per liter lambiek. Na de maceratie wordt de fruitlambiek opnieuw geblend om tot een indrukwekkende fruitintensiteit van 35% te komen.

Het resultaat is een lambiek met een intens en diep aromaboeket van bosvruchten, waarin de volle, rijpe smaken van zowel frambozen als krieken prachtig naar voren komen. De zure en fruitige smaakprofielen zijn goed in balans, waardoor het bier fris en vol diepgang blijft, met een authentieke complexiteit die typerend is voor de stijl van 3 Fonteinen.

Questo Lambic di frutta viene quindi nuovamente miscelato con diversi altri Lambic. Bouquet olfattivo di straordinaria complessità, ricchezza ed equilibrio, dove si percepiscono fragranze molto intense di frutta rossa e di bosco (ciliegie e lamponi naturalmente ma anche ribes rosso), note lattiche e brettate (aia, cantina, cuoio e legno), di marzapane, mandorle, vaniglia ed un delicato tocco di aceto balsamico e scorza di limone. Altrettanto ineffabile al palato dove, con un corpo medio, una carbonatazione medio-leggera ed un mouthfeel liscio, palesa un’acidità citrica ed acetica decisa ma piacevole, assieme a un gusto aspro di lampone e ciliegia, note mandorlate, legnose, il tutto a metà tra il vinoso e l’aceto balsamico. Estremamente secca ed asciutta, si congeda con un finale acido di lunga durata.
Ci troviamo di fronte ad uno dei migliori esempi di Lambic-Framboise esistenti e, se tutto ciò non bastasse, questi i punteggi attuali sui due principali Beer Rating: Untappd 4,46/5 – Ratebeer 100/100.

3 Fonteinen es una cervecería belga situada en Beersel, cerca de Bruselas en la conocida como “Zona Lambic”. Todo empezó cuando Gastón Debelder y su esposa Raymonde Dedoncker, progenitores de Armand, actual alma mater de la cervecería, se instalaron en Beersel. Ahí se hicieron cargo de una tasca en la que históricamente se mezclaban lámbicas.

El negocio lo heredaron sus dos hijos, Guido se hizo cargo del restaurante y Armand de la cervecería. Aunque empezaron como blenders en 1999 sacaron su primera lambic realizada de manera íntegra en sus instalaciones. Un accidente tecnológico dio al traste con el crecimiento y consolidación de la cervecería en el 2009. Se perdió gran parte de la producción en botella pero Armand, con una idea de genio, supo sacar provecho a parte de lambic recalentada haciendo un destilado con el nombre de Armand’s Spirit. Gracias a eso pudo reflotar la empresa y volver a poner a 3 Fonteinen en el top del reconocimiento internacional.

Hommage se elabora macerando frambuesas (800g/l) de Pajottenland y cerezas agrias (240g/l) en una lambic joven durante 4 meses. Esta lambic afrutada resultante, a su vez se mezcla en una proporción del 35% con otras lambics buscando el equilibrio necesario entre fruta y acidez. A la vista tiene un agradable color rojo rubí y en aroma resalta la frambuesa y las frutas del bosque.

Descripción 6% – 3 Fonteinen Hommage es el resultado de la maceración de griottes y frambuesas enteras, recogidas a mano, en lambic joven tradicional, durante al menos cuatro meses, en una proporción de 760 gramos de frambuesas y 240 gramos de griottes por litro. A continuación, este lambic afrutado se ensambla con lambic joven y todo se embotella donde la fermentación continúa en la botella. Homenaje es una cerveza lambic frambuesa con cuerpo, con un intenso ramo de frutas de madera que evoluciona en el vidrio. Fruto natural, sin zumos, jarabes o azúcares añadidos. No pasterizado, no filtrado.
