The most famous among the fruit beers is without doubt the Kriek.

On a warm summer day, a lorry coming from the auction at Sint-Truiden delivers 4.000 kgs of fresh Kellery cherries to the brewery. The brewery staff will then

about 150 kgs of fruits in oakwood or chestnutwood barrels which can contain 650 litres of lambic and which have been cleaned some days before.

These barrels are filled with healthy lambics which are more or less one and a half year old. These are not so easy to find, because many beers are still ill at that age. These oily beers will have to mature for some months in the main barrel. When the Kriek barrels are filled with the fruits and with the lambic (about 500 litres), the hole in the barrel is closed with a sheet of paper in order to avoid contact with impurities.

Five days later, the fermentation starts. The sugars from the lambic and from the fruits bring about the activity of the yeasts which are concentrated in the wood and in the skin of the fruits. A marvelous pink or red foam decorates the old barrels in the cellar.

Normally, the fermentation stops around the 10th of August. The barrels are then closed and the acid lambic begins to extract the taste and the colour from the fruits. Flies and mosquitoes haunt the cellars and are likely to provoke bad infections. Due to the presence of the home spider, however, a natural predator which is more efficient than any insecticide, the Cantillon Brewery presents a natural equilibrium which enables us to produce our beers.

The fermentation of the Kriek in the bottle generally starts in the beginning of October. Two barrels of Kriek from the first extraction and two from the second are pumped into a huge barrel. (The second extraction is obtained by filling the barrel for a second time in order to extract as much from the fruits as possible). It is also possible to blend a certain quantity of young lambic with the Kriek in order to obtain a second fermentation in the bottle. The Kriek goes through a natural saturation, normally after three to five months in the bottle. We recommend to drink the Kriek within one year after the bottling.

The fermentation will change the primary taste of the product and the Kriek will be dominated by the character of the lambic. The red colour will change into more oily shades. This is, however, a personal point of view. Some customers conserve their Kriek for a long time and like it that way. Kriek is a traditional summer beer. It is a very thirst-quenching beer which tastes deliciously with a big slice of brown bread with white cheese, radishes, onions and chives.

Years ago, people who drank Kriek in a pub were also given two lumps of sugar and a stoemper on a small plate. With the stoemper, the customer could crush the sugar on the bottom of his glass and sweeten it in a natural way in order to eliminate the sour taste. Ver menos

The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

Smaak Cantillon Kriek. In de beginjaren werkten de brouwers van Cantillon uitsluitend met lokale ingrediënten. Om hun aanbod uit te breiden, begonnen ze recepten te ontwikkelen op basis van seizoensfruit. Het bekendste resultaat daarvan is zonder twijfel de Kriek, inmiddels uitgegroeid tot een icoon onder de fruitbieren.

Elke zomer arriveert een vrachtwagen uit Sint-Truiden met duizenden kilo’s verse Kellery-kersen. Voor de kriek gaat ongeveer 150 kg fruit in een vat van eiken- of kastanjehout, samen met zo’n 500 liter lambiek van gemiddeld anderhalf jaar oud. Deze lambieken zijn zorgvuldig geselecteerd, want op die leeftijd zijn veel bieren nog “ziek” en niet geschikt voor verdere rijping.

Na het vullen wordt het vat afgesloten met enkel een vel papier, zodat de lambiek kan ademen maar beschermd blijft tegen onzuiverheden. Al na enkele dagen start de gisting: de suikers uit de kersen en lambiek voeden de wilde gisten die aanwezig zijn in het hout en op de vruchtenschillen. In de kelders verschijnen dan prachtige schuimkragen in tinten van roze en rood.

De kriek wordt in oktober gebotteld. Vaak worden vaten van de eerste en tweede extractie samengevoegd, waarbij de tweede extractie ontstaat door de vaten opnieuw te vullen om het resterende fruitaroma te benutten. Soms wordt ook een deel jonge lambiek toegevoegd, zodat er op fles een tweede gisting op gang komt. Na drie tot vijf maanden is de kriek natuurlijk verzadigd met koolzuur en klaar om te drinken.

Door de gisting verandert het smaakprofiel: de frisse kersensmaken maken plaats voor een complexer geheel waarin de lambiek domineert. Ook de kleur evolueert van helder rood naar diepere, olieachtige tinten. Sommige liefhebbers drinken hun kriek jong voor de frisse fruitigheid, anderen laten hem rijpen en waarderen de rijpe, complexe tonen.

Kriek is bij uitstek een zomers dorstlessend bier. Heerlijk in combinatie met traditioneel Vlaams bruin brood, witte kaas, radijsjes, ui en bieslook. History:

Belgian pubs haven’t always offered 200 or 300 types of beers to their customers. Many years ago only local products were sold, and in order to make drinks lists a little more extensive and expensive brewers came up with recipes based on locally-produced fruit. The most famous among the fruit beers is without a doubt kriek.

Cantillons Kriek er lavet med det ypperste respekt for håndværket og råvarerne, hvorfor alt fra malten, til humlen, til den enorme mængde kirsebær er 100% økologiske.

Øllen består af en blanding af 1 og 2 år gammel Lambic, der gennemsnitligt har en alder på 20 måneder, denne blanding tilføres 200 g økologiske sur-kirsebær pr. liter øl, og får lov til at macere med frugten i 2 til 3 måneder, for at øllet får ekstraheret maksimal farve, aroma og smag fra kirsebærene. Herefter blandes øllen med en ung 1 år gammel lambic inden den flaskes, for at der er sukre nok til andengæringen der giver boblerne.

Cantillon bruger udelukkende friske frugter, og intet koncentrat, hvorfor årgangene har noget at sige for øllens endelige udtryk, dog for alle Cantillon øl er det en øl der kan drikkes ung, hvor frugten vil være meget udtalt og dominerende, men kan også lagres hvor man vil se at Lambicen vil stå mere frem, på bekostning af frugten.

The fruiting process for Kriek 100% Lambic consists of taking pre-frozen cherries and placing them whole in stainless steel tanks with two-year old lambic for a maceration period of 1-2 months. It is then transferred to a stainless steel bottling tank until it is ready to be bottled. A quantity of young lambic is added before bottling to obtain a secondary fermentation in the bottle.

Smaak Cantillon Kriek. In de beginjaren werkten de brouwers van Cantillon uitsluitend met lokale ingrediënten. Om hun aanbod uit te breiden, begonnen ze recepten te ontwikkelen op basis van seizoensfruit. Het bekendste resultaat daarvan is zonder twijfel de Kriek, inmiddels uitgegroeid tot een icoon onder de fruitbieren.

Elke zomer arriveert een vrachtwagen uit Sint-Truiden met duizenden kilo’s verse Kellery-kersen. Voor de kriek gaat ongeveer 150 kg fruit in een vat van eiken- of kastanjehout, samen met zo’n 500 liter lambiek van gemiddeld anderhalf jaar oud. Deze lambieken zijn zorgvuldig geselecteerd, want op die leeftijd zijn veel bieren nog “ziek” en niet geschikt voor verdere rijping.

Na het vullen wordt het vat afgesloten met enkel een vel papier, zodat de lambiek kan ademen maar beschermd blijft tegen onzuiverheden. Al na enkele dagen start de gisting: de suikers uit de kersen en lambiek voeden de wilde gisten die aanwezig zijn in het hout en op de vruchtenschillen. In de kelders verschijnen dan prachtige schuimkragen in tinten van roze en rood.

De kriek wordt in oktober gebotteld. Vaak worden vaten van de eerste en tweede extractie samengevoegd, waarbij de tweede extractie ontstaat door de vaten opnieuw te vullen om het resterende fruitaroma te benutten. Soms wordt ook een deel jonge lambiek toegevoegd, zodat er op fles een tweede gisting op gang komt. Na drie tot vijf maanden is de kriek natuurlijk verzadigd met koolzuur en klaar om te drinken.

Door de gisting verandert het smaakprofiel: de frisse kersensmaken maken plaats voor een complexer geheel waarin de lambiek domineert. Ook de kleur evolueert van helder rood naar diepere, olieachtige tinten. Sommige liefhebbers drinken hun kriek jong voor de frisse fruitigheid, anderen laten hem rijpen en waarderen de rijpe, complexe tonen.

Kriek is bij uitstek een zomers dorstlessend bier. Heerlijk in combinatie met traditioneel Vlaams bruin brood, witte kaas, radijsjes, ui en bieslook.
