À semelhança de outras cervejas trapistas, as cervejas de Westmalle refermentam na garrafa e por isso o paladar e o aroma continuam e evoluir após o engarrafamento. Os monges trapistas deixam alguns conselhos em relação à forma de conservar e servir as suas cervejas: guarde as suas garrafas numa posição vertical e sirva a cerveja delicadamente, guardando cerca de 1 cm de cerveja (e levedura) na garrafa. Desta forma, a levedura não vai para o copo e a sua Westmalle fica perfeitamente límpida. Algumas pessoas gostam de beber a levedura depois de degustarem a cerveja, isto é aliás um hábito dos monges (!). A levedura da cerveja é uma fonte natural de vitamina B.
O nome completo da abadia é Abadia de Nossa Senhora do Sagrado Coração de Westmalle. A comunidade foi fundada em 1794 por monges da Ordem dos Cistercienses da Estrita Observância e recebeu o estatuto de Abadia em 1836. Os monges desta ordem são comumente conhecidos como Trapistas, em homenagem à Abadia de La Trappe, em França. Desde o final do século XVIII que os monges da Abadia de Westmalle se dedicam a uma vida comunitária de oração e trabalho, “Ora et Labora”. Ficha Técnica

Su formato Dubbel no se creó hasta el año 1856, siendo por aquel entonces una cerveza mucho más suave que la actual. Concretamente, en el año 1926, los monjes modificaron la receta para convertirla en una cerveza más robusta y con mayor graduación alcohólica.
Las cervezas trapenses son cervezas elaboradas en monasterios trapenses aunque de forma oficial únicamente se fabrica cerveza trapense en nueve de los 171 monasterios. En Bélgica hay seis de ellos, los otros se encuentran en los Países Bajos, Austria y Francia. Para que una cerveza se pueda etiquetar como trapense debe reunir tres requisitos fundamentales: Tiene que ser elaborada por los monjes trapenses o bajo su dirección, la fábrica depende del monasterio y es parte de él y de su forma de vida y la venta de la cerveza proporcionará los medios necesarios para el sostenimiento de los monjes y el resto se dedicará a obras sociales.
Tras servirla podemos apreciar su color marrón oscuro con algunos destellos cobrizos acompañados de una corona de espuma color beige compacta, densa y sumamente duradera. Su doble fermentación en botella le aporta esos sedimentos procedentes de las levaduras que se posan en el fondo de la botella. Sus aromas son intensos pero delicados y con matices a frutos oscuros, caramelo, chocolate, floral, tenue torrado, almendras, el ya clásico aroma de levadura afrutada y especiada, pasas, trufas y un leve toque cítrico. Su entrada en boca se presenta con un cuerpo robusto con textura sedosa y una gasificación media que aporta una sensación muy agradable. Paladar complejo donde reaparecen casi todos los aromas, amargor entre matices dulces y torrados, frutos secos, pasas, cerezas, suave fondo a chocolate. Al final se acentúa un poco más el amargor dando lugar a un retrogusto prolongado afrutado y especiado. Conserva un equilibrio típico de las cervezas belgas en el que se contrarresta perfectamente su graduación alcohólica. La temperatura adecuada debe rondar los 12 grados y se debe servir en copa de cáliz.
