Geschmacklich ist das Dubbel würzig und fruchtig mit einer leichten Bitternote im Abgang. Alles zusammen hinterlässt ein sehr volles und komplexes Aromaprofil. Insgesamt ist das Dubbel sehr gut zu trinken, da es recht mild ist. Die Milde kommt vor allem von der Flaschengärung, denn nachdem das Westmalle Dubbel in die Flasche abgefüllt wurde, gärt es da noch etwas nach.

TRAPPIST OF DUBBEL?
De monniken van Westmalle brouwen al sinds 1856 een donker trappistenbier naast hun bestaande maaltijdbier. In 1926 passen ze het recept aan en brouwen ze het bier wat zwaarder door de ingrediënten te verdubbelen. Zo kwam het bier aan zijn naam Dubbel, hoewel velen hem vaak gewoon Trappist noemen. Dat recept is nog altijd de basis voor de Westmalle Dubbel die we nu kennen.
WESTMALLE DUBBEL: FLES EN VAT
Westmalle Dubbel is het best gekend in flesjes van 33 cl. Maar de Dubbel van Westmalle wordt ook getapt in zo’n 150 zorgvuldig geselecteerde horecazaken uit vaten van 20, 30 en 50 liter. In deze vaten evolueert dit levende bier ietsje anders en krijgt het een andere, wat zoetere smaak dan een Dubbel uit een flesje.
Het degusteren van een Dubbel kan ook uit flessen van 75 cl , waarin het bier verschillend rijpt als in een kleinere fles. Vooral de zachtere afdronk valt daarbij op.
Nadat men in 1856 begon met een eenvoudig tafelbier te brouwen en er vraag ontstond naar dit bier, maakten de monniken een rijkere versie met het dubbele aan ingrediënten. Dat was meteen de basis en de oorsprong van de naam van wat later de Dubbel zou worden.
