Noble Hallertau hops provide a firm but elegant structure, balancing the profound malt sweetness with a clean, spicy bitterness. Subtle fruity esters of dried plums and figs emerge as the beer warms, reflecting a long, cold fermentation. This is a full-bodied, velvety experience that honors its monastic heritage with a sophisticated, lingering finish of toasted nuts and cocoa.
Appearance. Deep mahogany with brilliant clarity and distinct ruby-red highlights (SRM 22–25). Features a large, creamy, and persistent light brown head with excellent lacing.
Aroma. High intensity malt-forward profile. Rich Maillard products dominate, offering scents of toasted bread crust, toffee, and dark chocolate. Moderately low esters of dark fruit, specifically plum and fig, are present. Hop aroma is nearly absent, though a faint herbal wisp from Hallertau hops may be detected. No harsh roasted or burnt notes.
Taste. The initial impression is intensely malty and rich. Dominant flavors of toasted malt, cocoa, and light coffee are balanced by a medium-low bitterness from Hallertau hops. The mid-palate reveals complex nutty and caramelized sugar notes alongside dark fruit esters. The finish is smooth and clean, with a lingering malt-driven sweetness that remains well-attenuated and never cloying.
Mouthfeel. Full-bodied and velvety with a smooth, creamy texture. Carbonation is moderate to moderately low. A gentle, well-integrated alcohol warmth is present at 7.4% ABV but never sharp or fusel. No astringency.
