Rochefort è uno dei marchi trappisti più famosi al mondo, uno dei sei birrifici del Belgio che possiede la denominazione di Authentic Trappist Product. La Brasserie di Rochefort si trova all’interno dell’Abbazia di Notre Dame de Saint Remy, in Vallonia, nel piccolo paese di Rochefort.
L’abbazia viene costruita nel 1230 mentre la produzione della birra inizia con l’arrivo dei monaci trappisti nel 1464, anche se il primo documento ufficiale che conferma l’attività brassicola è datato 1595. La produzione subisce delle pause in occasione dei grandi eventi della storia europea, ma dal 1952 continua ininterrottamente.
Le tre birre di Rochefort vengono prodotte con il proprio lievito e con l’acqua proveniente dalla fonte all’interno del monastero, e vengono fatte per un numero di settimane equivalente alla denominazione, adottata secondo la scala di Baumè.

Munkene i Abbaye Notre-Dame de Saint-Remy i Rochefort har brugt øl siden 1595. For at gøre det bruger de vand fra en gammel brønd inde i klostrets mure. Der er faktisk meget lidt kendt om dette kloster, fordi det er lukket for besøgende. Deres produktion er ret begrænset, for der er i øjeblikket kun 15 munke tilbage til brygningen.
Udover deres bedst sælger Rochefort 10 brygger de også den lettere Rochefort 8, en anden mørk øl med et alkoholindhold på 9,2% og Rochefort 6, en ravfarvet Trappist-øl, der kun brygges et par gange om året.
