Brasserie de Rochefort (Abbaye St-Remy)

Trappistes Rochefort 10 is an iconic Belgian Dark Strong Ale, often referred to as a Quadrupel, showcasing a masterful blend of rich malt and expressive fermentation. The sensory journey begins with an intense bouquet of latte-like coffee and dark chocolate, accented by spicy cloves and bright citrus zest. On the palate, a profound depth of dark fruit—namely raisins, plums, and figs—mingles with vinous notes reminiscent of vintage Port. This complexity is underpinned by a bready, biscuit-like malt backbone and subtle earthy leather, finishing with a smooth, warming alcohol presence that highlights its monastic heritage and significant strength.

Appearance. Deep, dark mahogany to chestnut brown with a slight ruby tint (approx. 25–35 SRM). It features a massive, dense, and exceptionally persistent tan head that leaves thick, moussy lacing on the glass. Generally clear, though a slight yeast haze may be present.

Aroma. High intensity and deeply complex. Dominant aromas of dark chocolate, mocha, and freshly baked biscuits are layered with powerful esters of plum, raisin, and black currant. A distinctive spiciness emerges as clove and black pepper, accompanied by hints of orange peel and autumn wood. A soft, vinous alcohol character adds a perfume-like elegance.

Taste. Initial impression is richly sweet, transitioning into a multifaceted profile of dark fruit, bitter chocolate, and nutty chestnut. A moderate malt bitterness balances the dark sugar sweetness. Fermentation notes include earthy leather, subtle oak, and a touch of apricot. The finish is remarkably dry for its gravity, leaving lingering traces of cocoa, warm spices, and a refined Port wine vinousness.

Mouthfeel. Full-bodied and exceptionally creamy, almost viscous. Despite the weight, high carbonation prevents it from feeling cloying. A significant, smooth alcohol warmth provides a pleasant glow in the throat without any harsh fusel burn.

Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha.
The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label.

Het is slechts negen brouwerijen ter wereld vergund het predikaat ‘erkend trappist’ te voeren: Rochefort is er een van. De brouwerij, gelegen in een klooster dat oorspronkelijk een nonnenklooster was, heeft bij het opstarten van haar activiteiten de hulp van vele andere cisterciënzers gehad. Het meest in het oog springen Pater Anselmus en de broeders van Chimay. Pater Anselmus, broeder brouwer van de trappisten van Achel, richt de brouwerij in en brouwt het eerste bier met het recept van ‘Paters Vaatje’, het oorspronkelijke Achelse bier in 1899. Vier maal per week nemen de monniken de roerstok ter hand en brouwen zij, de brouwsels zijn tussen de 7.500 en 10.000 liter wat afhankelijk is van het gewenste alcoholvolume. Gedurende het jaar wordt er niet meer dan 1.800.000 liter bier gebrouwen – dat is niet bijster veel!

Rochefort 10, ook wel de ‘Merveille’ of ‘allerbeste’ genoemd, is de belichaming van de stijl ‘trappist speciaal’. Met haar diepdonkere kleur en een alcoholgehalte van 11,3% per volume is zij het sterkste trappistbier dat u commercieel verkrijgen kunt, hoewel dat maar mondjesmaat is. Het is waarlijk een dijk van een bier!
