The sensory journey begins with an intense bouquet of latte-like coffee and dark chocolate, accented by spicy cloves and bright citrus zest. On the palate, a profound depth of dark fruit—namely raisins, plums, and figs—mingles with vinous notes reminiscent of vintage Port. This complexity is underpinned by a bready, biscuit-like malt backbone and subtle earthy leather, finishing with a smooth, warming alcohol presence that highlights its monastic heritage and significant strength.
Appearance. Deep, dark mahogany to chestnut brown with a slight ruby tint (approx. 25–35 SRM). It features a massive, dense, and exceptionally persistent tan head that leaves thick, moussy lacing on the glass. Generally clear, though a slight yeast haze may be present.
Aroma. High intensity and deeply complex. Dominant aromas of dark chocolate, mocha, and freshly baked biscuits are layered with powerful esters of plum, raisin, and black currant. A distinctive spiciness emerges as clove and black pepper, accompanied by hints of orange peel and autumn wood. A soft, vinous alcohol character adds a perfume-like elegance.
Taste. Initial impression is richly sweet, transitioning into a multifaceted profile of dark fruit, bitter chocolate, and nutty chestnut. A moderate malt bitterness balances the dark sugar sweetness. Fermentation notes include earthy leather, subtle oak, and a touch of apricot.
