Timmermans Faro Lambicus offers a delicate sensory journey into the historic traditions of Brussels. This Fruit Lambic presents a refined interplay between the sharp, lactic acidity of barrel-aged lambic and the mellowing influence of added candi sugar. The aroma is characterized by a soft, rustic funk harmonized with distinctive notes of orchard apples. On the palate, an initial wave of candi sugar sweetness provides a refreshing counterpoint to the underlying tartness, creating a balanced and approachable profile. The finish is short and clean, leaving a light sugary trail that complements the earthy complexity and mild wheat character of the base wild ale.
Appearance. Pours a clear to slightly hazy deep amber to copper (SRM 10-14). It forms a thin, off-white head with moderate retention and light lacing on the glass.
Aroma. Moderate intensity with a complex blend of lactic tartness and rustic, barnyard funk including notes of wet hay and horse blanket. Distinctive fruity esters of green apple and pear are present, accented by a light, caramel-like sweetness from the candi sugar. Hop aroma is absent.
Taste. Initial impression is a soft, sugary sweetness that immediately meets a crisp, lactic acidity. The malt profile is low, providing a slight bready wheat foundation. No hop flavor or bitterness is perceived. Earthy and funky Brettanomyces character provides complexity, while the added sugar provides a balanced-sweet contrast to the sour base. The finish is short, clean, and refreshing with a lingering hint of apple skin.
Mouthfeel. Medium-light body with moderate carbonation. It lacks the sharp, puckering astringency of a Gueuze, instead offering a smooth, slightly syrupy texture that remains refreshing. No alcohol warmth is detected at this strength.
