Brewed at a sessionable 3.8% ABV, this beer showcases the complex interplay of proprietary microflora and hand-foraged blossoms. Aromas of sweet elderflower, exotic jasmine, and elegant rose intertwine with a rustic, hay-like Brettanomyces funk. On the palate, a crisp, bone-dry structure highlights herbal woodruff and black locust blossoms, supported by a gentle, refreshing acidity. Effervescent and incredibly light-bodied, it offers a beautifully nuanced snapshot of Berlin’s wild terroir, culminating in a dry, floral, and clean finish.
Appearance.Pale straw to light gold (SRM 2-3). Distinctly hazy with a fine, billowy white head that recedes to a persistent collar, leaving delicate lacing.
Aroma.Moderate-high intensity featuring a complex bouquet of floral jasmine, sweet elderflower, and soft rose petals. This is beautifully layered over a rustic Brettanomyces profile of wet hay, dusty cellar, and cracked wheat malt, with a subtle herbal woodruff note and a clean, lactic tang.
