Schneeeule Flora is an ethereal, highly refreshing Brett Beer crafted as a delicate wild ale blend. Brewed at a sessionable 3.8% ABV, this beer showcases the complex interplay of proprietary microflora and hand-foraged blossoms. Aromas of sweet elderflower, exotic jasmine, and elegant rose intertwine with a rustic, hay-like Brettanomyces funk. On the palate, a crisp, bone-dry structure highlights herbal woodruff and black locust blossoms, supported by a gentle, refreshing acidity. Effervescent and incredibly light-bodied, it offers a beautifully nuanced snapshot of Berlin’s wild terroir, culminating in a dry, floral, and clean finish.
Appearance. Pale straw to light gold (SRM 2-3). Distinctly hazy with a fine, billowy white head that recedes to a persistent collar, leaving delicate lacing.
Aroma. Moderate-high intensity featuring a complex bouquet of floral jasmine, sweet elderflower, and soft rose petals. This is beautifully layered over a rustic Brettanomyces profile of wet hay, dusty cellar, and cracked wheat malt, with a subtle herbal woodruff note and a clean, lactic tang.
Taste. Crisp and highly attenuated. Initial flavors of citrusy wheat malt and bright floral nectar—notably elderflower and jasmine—transition into a drying, herbal complexity reminiscent of woodruff. A mild, refreshing acidity balances a very low hop bitterness. The finish is bone-dry and effervescent, leaving a lingering, dusty wildflower and rustic Brett funk aftertaste.
Mouthfeel. Light, refreshing body with very high, spritzy carbonation. No alcohol warmth. Crisp, lean, and highly refreshing with a very faint, pleasant dryness from the blossom infusion.

Im Jahr 2018 waren es Holunder-, Jasmin-, Rosen – und Robinienblüten. Im Jahr 2019 werden es Jasmin-, Robinien- , Rosen-, Waldmeister- und Goldrutenblüten sein. Nicht nur die Blüten , sondern vor Allem auch die Mikroorganismen bestimmen den Geschmack und Textur des Bieres, so dass man Entwicklungen in den Jahren erkennen kann.
