Il processo di invecchiamento aggiunge una nota fruttata, che trova un sottile equilibrio tra il gusto corposo ma complesso e l’amarezza della birra. Gli aromi della birra sono molto pronunciati mantenendo il giusto livello di amarezza grazie al metodo inglese del dry hopping.
Le varie fasi della fermentazione – la fermentazione combinata con il lievito originale e con il lievito selvatico, seguita dalla fermentazione in bottiglia – significano che la birra deve invecchiare per qualche tempo e richiede numerosi controlli di qualità.

What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster.
In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

Met zijn bitter-fruitige smaak is het Orval-bier uitgegroeid tot een sterke referentie in de zeer gewaardeerde wereld van de authentieke trappistenbieren.
Orval is een bier van hoge gisting en lange lagering. Op die manier krijgt het zijn complex-fruitige karakter en die subtiele harmonie tussen volrond en bitter.
Sinds 1931 dankt het bier van Orval zijn onvergelijkbare smaak vooral aan de kwaliteit van het water, de hop en de gisten die gebruikt worden Het bier wordt gebrouwen met bepaalde, sterk aromatische hopvariëteiten, die geselecteerd werden door de allereerste meester-brouwer van Orval, die uit Beieren afkomstig was. En de zogenaamde Engelse drooghopmethode zorgt voor een verscheidenheid aan aroma’s met tegelijk behoud van een zekere bitterheid.
De verschillende gistingsstadia – gecombineerde gisting, met de originele gist en met een wilde gist, gevolgd door hergisting op fles – vereisen een lange lagerduur en heel veel kwaliteitscontroles.
EEN WELOVERWOGEN PRODUCTIE
Enerzijds is er de steeds grotere vraag naar Orval-bier en anderzijds houdt de Brouwerij van Orval sterk aan haar kennis en waarden, met een productie waarin kwaliteit en de eigen productiemethodes al meer dan 80 jaar voorop staan.
Net als elk ander trappistenbier dat het “Authentic Trappist Product” label voert, moet het bier van Orval zich aan erg strenge productievoorschriften houden. De verankering van het bier aan de ligging van de abdij en van de Mathildebron, is lokaal en zal dat altijd blijven.
Alle stappen in het brouwproces staan borg voor kwaliteit en voor een respectvolle naleving van de oorspronkelijke brouwmethodes. Deze manier van werken vereist beheersing en geleidelijkheid inzake groei, en kent zijn grenzen.
De Brouwerij van Orval is voorstander van een gematigde productie, die niettemin echt wel aanzienlijk is: jaarlijks verlaten 22 miljoen flessen de brouwerij, waarvan ruim 85% voor de Belgische markt bestemd is.
Sinds de oprichting van de Brouwerij is de monnikengemeenschap, daarin begeleid door haar meester-brouwers, altijd blijven sleutelen aan haar brouwapparaat. De brouwerij voert een beleid waarbij doorlopend geïnvesteerd wordt met de bedoeling de productie steeds beter, gecontroleerder en regelmatiger te maken. Op die manier slaagt zij erin om zo veel mogelijk tegemoet te komen aan de vraag en om de trouw van de Orval-liefhebbers optimaal te honoreren.
