Sinds 1931 dankt het bier van Orval zijn onvergelijkbare smaak vooral aan de kwaliteit van het water, de hop en de gisten die gebruikt worden Het bier wordt gebrouwen met bepaalde, sterk aromatische hopvariëteiten, die geselecteerd werden door de allereerste meester-brouwer van Orval, die uit Beieren afkomstig was. En de zogenaamde Engelse drooghopmethode zorgt voor een verscheidenheid aan aroma’s met tegelijk behoud van een zekere bitterheid.

De verschillende gistingsstadia – gecombineerde gisting, met de originele gist en met een wilde gist, gevolgd door hergisting op fles – vereisen een lange lagerduur en heel veel kwaliteitscontroles.

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.

What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster.

In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

Dorata carica, sono sicuramente i lieviti che la rendono estremamente riconoscibile con caratteristici sentori speziati e agrumati. In bocca si distinguono un leggerissimo acidulo, una carbonatazione mediamente vivace, il ritorno delle note speziate, un lieve amaro e una secchezza elegante. Sicuramente la più particolare delle trappiste belghe, si presta all’invecchiamento e al confronto fra annate diverse.

N.B.: a differenza di altre birre consigliamo con questa di agitare bene il fondo avendo cura di versare anche quello nel bicchiere col resto della birra.

The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster. In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

La birra trappista belga “unica nel suo genere”. Inizia molto secca, amara che poi lo seguono sentori di pera, pane e di lievito fresco. Il processo di invecchiamento aggiunge una nota fruttata, che trova un sottile equilibrio tra il gusto corposo ma complesso e l’amarezza della birra. Gli aromi della birra sono molto pronunciati mantenendo il giusto livello di amarezza grazie al metodo inglese del dry hopping.

Le varie fasi della fermentazione – la fermentazione combinata con il lievito originale e con il lievito selvatico, seguita dalla fermentazione in bottiglia – significano che la birra deve invecchiare per qualche tempo e richiede numerosi controlli di qualità.
