The use of champagne yeast imparts a remarkable dryness and effervescence, transforming a simple malt bill into a crisp canvas for assertive hopping. Expect a sensory profile defined by vibrant pear, lemon, and orange esters, layered with herbal and floral hop notes. Appearance.Deep gold to pale amber in color (8–12 SRM) with brilliant clarity. It supports a tall, rocky, persistent white head that leaves significant lacing.
Aroma.Moderate intensity with a clean, bready, and crackery malt backbone. High fruitiness presents notes of pear, green apple, and lemon zest. The hop character is assertive for the style, offering floral and spicy herbal notes with a very low, clean peppery phenol presence.
Taste.Initial soft, biscuity malt and light honey flavors are quickly balanced by a firm hop bitterness. Pronounced esters of orange and orchard fruit provide depth.
