Levon is a sophisticated evolution of the Belgian Pale Ale, reimagined through Omnipollo’s modern lens to bridge the gap between traditional craftsmanship and contemporary hop-forward profiles. The use of champagne yeast imparts a remarkable dryness and effervescence, transforming a simple malt bill into a crisp canvas for assertive hopping. Expect a sensory profile defined by vibrant pear, lemon, and orange esters, layered with herbal and floral hop notes. Despite its 6.5% ABV, it maintains a remarkably refreshing character that remains rich in taste, offering a complex yet highly drinkable experience that purposefully avoids the profile of a bland lager.

Appearance. Deep gold to pale amber in color (8–12 SRM) with brilliant clarity. It supports a tall, rocky, persistent white head that leaves significant lacing.

Aroma. Moderate intensity with a clean, bready, and crackery malt backbone. High fruitiness presents notes of pear, green apple, and lemon zest. The hop character is assertive for the style, offering floral and spicy herbal notes with a very low, clean peppery phenol presence.

Taste. Initial soft, biscuity malt and light honey flavors are quickly balanced by a firm hop bitterness. Pronounced esters of orange and orchard fruit provide depth. The finish is remarkably dry and crisp, driven by the champagne yeast, with a lingering herbal hop character and a clean, refreshing aftertaste.

Mouthfeel. Medium-light body with very high, spritzy carbonation reminiscent of sparkling wine. Smooth on the palate with a light, well-integrated alcohol warmth and no astringency.
