La Mère Noël presents a vibrant blonde expression of the Winter Seasonal Beer style, departing from darker traditions with a refreshing, light-gold profile. The nose is dominated by an intricate bouquet of fruity esters and spicy phenols—suggestive of pear, citrus, and clove—derived from the unique fermentation of three distinct yeast strains. On the palate, a delicate honeyed malt sweetness is quickly overtaken by a distinctive, firm bitterness and a piquant, peppery finish.
