La Mère Noël presents a vibrant blonde expression of the Winter Seasonal Beer style, departing from darker traditions with a refreshing, light-gold profile. The nose is dominated by an intricate bouquet of fruity esters and spicy phenols—suggestive of pear, citrus, and clove—derived from the unique fermentation of three distinct yeast strains. On the palate, a delicate honeyed malt sweetness is quickly overtaken by a distinctive, firm bitterness and a piquant, peppery finish. The high carbonation creates a lively, effervescent mouthfeel that expertly integrates the robust alcohol, resulting in a crisp, warming, and sophisticated seasonal ale with a lingering, dry bitter edge.
Appearance. Light blonde (SRM 4–6). Brilliant clarity with an effervescent stream of fine bubbles. Pours a dense, creamy, and persistent stark-white head with excellent lacing.
Aroma. High intensity with a complex profile of fruity esters, specifically ripe pear, apple, and lemon zest. Pronounced spicy phenols reminiscent of white pepper and clove. Low, sweet cracker-like malt character with a clean, supportive alcohol note.
Taste. Initial impression of orchard fruit sweetness and soft bready malt. Rapidly gives way to a sharp, spicy yeast character and a particular, firm hop bitterness. The finish is dry and refreshing with a notable peppery tingle. Aftertaste is clean but features a lingering, sophisticated bitterness and a hint of warming alcohol.
Mouthfeel. Medium-light body with a crisp, highly carbonated, and prickly texture. Noticeable alcohol warmth that remains smooth rather than harsh. Refreshing and drying on the tongue with no astringency.
