This Wild Specialty Beer is a vibrant, unconventional sensory journey. Dominated by a lush infusion of raspberry puree, it offers a striking juxtaposition of bright red fruit and earthy roasted coffee. The grain bill, featuring Extra pale malt, Oat malt, and Wheat malt, provides a soft, bready foundation. Fermented with Philly Sour yeast, it delivers a sharp, clean lactic acidity that cuts through the creamy, dessert-like texture of ice cream powder. The result is a complex profile where zesty fruit, subtle bitterness, and a rich, velvety mouthfeel collide in a surprising yet harmonious display of artisanal experimentation.
Appearance. Opaque, deep ruby-red to magenta hue; features a thick, pink-tinted head with moderate retention and fine lacing.
Aroma. High intensity; pungent fresh raspberry and floral tartness dominate the nose, followed by unexpected notes of cold-brew coffee and light toasted grain. Low tropical esters are present from the fermentation.
Taste. Immediate sharp lactic sourness and jammy raspberry flavors lead. The mid-palate introduces a peculiar but intriguing roasted coffee bean character and a subtle, creamy sweetness. The finish is tart and lingering with a hint of earthy roast and very low hop bitterness.
Mouthfeel. Medium-full body with a silky, creamy texture derived from oat flakes and maltodextrin. Moderate carbonation provides a lively lift; alcohol warmth is negligible.

So, give it a quick chill, give the can a thorough roll, and pour it gently. Oh, and it’s vegan.
