Sour Ale 7 º 35 IBU
Cuvée De Ranke is a masterfully blended Straight Sour Beer, combining seventy percent barrel-aged sour ale with thirty percent authentic Girardin Lambic. This synergy results in a complex sensory profile defined by a sharp, lemony lactic acidity and deep, earthy funk. The influence of the lambic component introduces cider-like nuances and a subtle vinous character, while the time spent in oak barrels adds structural wood notes and a softened mouthfeel. Despite its vibrant acidity, the beer maintains a sophisticated balance between citrus-forward tartness and a bready malt backbone, finishing crisp, dry, and exceptionally refreshing with an evolving depth.
Appearance. Pale gold to light amber (5–8 SRM). Large, frothy white head with moderate to poor retention. High effervescence with slight haze from the mixed fermentation cultures.
Aroma. High intensity lactic sourness with a sharp, lemony edge. Pronounced notes of tart apple, citrus, and a distinctive earthy, funky character from the Girardin Lambic. Mild bready malt sweetness and a faint hint of neutral oak are present. No hop aroma.
Taste. Initial impression is sharply acidic and tart. Dominated by clean lactic sourness and citrus-heavy fruitiness. The lambic contribution adds complex layers of funk and aged cider. Malt flavor is low, providing a thin, bready support. Hop bitterness is undetectable. The finish is very dry and crisp with a lingering, vinegary tartness that remains approachable.
Mouthfeel. Medium-light to medium body, offering more substance than a typical Berliner Weisse. High carbonation provides a lively, scrubbing prickle. A subtle alcoholic warmth is present at seven percent. Minimal astringency.

Cuvée De Ranke is a somewhat sour, somewhat hoppy beer based, on an old style that has recently become more popular among craft brewers in Belgium and throughout the world. Until now, many modern brewers were afraid to combine sour and bitter in the same flavor profile, but years ago this was a most popular and refreshing union.

The Cuvée De Ranke is roughly a 70/30 blend of a beer brewed with top fermenting Rodenbach yeast and aged Giardin lambic. According to the Belgian government, this beer could actually be called “lambic”, and, although it isn’t an extremely sour beer, it actually contains about 5 times as much authentic lambic as some of the more popular products that call themselves “lambics”. But unlike the makers of artificially-flavored, heavily sweetened, commercial concoctions, Nino and Guido simply have too much respect for authentic lambic producers to use the term for their Cuvée.

Instead, Cuvée De Ranke stands on its own for what it is: an elegant yet rustic, well-balanced, traditionally styled beer.
