Cada sorbo de Chimay Doree es el resultado de una cuidadosa selección de ingredientes de la más alta calidad. Utilizando el agua cristalina del pozo de la Abadía de Scourmont, los monjes elaboran esta delicia con malta de cebada, lúpulo, piel de naranja amarga y cilantro, a los que añaden su levadura de cepa propia y un toque de azúcar.
Pero aquí viene la curiosidad: los monjes de Chimay tenían un noble propósito en mente al crear esta cerveza. Chimay Gold — чистый солодовый эль с освежающими нотками хмеля и пряностей, который уже много лет варится для монашеской общины, гостей и сотрудников. Рецепт этого пива остается неизменным с самого начала. Ингредиенты, используемые при изготовлении пива, всегда указываются на этикетках всех напитков "Шимэ". Так, в состав "Шимэ" Голд входят вода, ячменный солод, сахар, хмель, дрожжи, кожура горького апельсина и кориандр. Пиво проходит естественное повторное брожение в бутылках за счет добавления сахара и дрожжей непосредственно перед розливом. В этом и заключается изюминка пива "Chimay". Брожение в бутылках является гарантией качества. Чтобы сохранить подлинный вкус, пиво не фильтруется и не пастеризуется.

Chimay Goud Blond - траппистский крепкий эль от бельгийской пивоварни Bieres de Chimay
Пивоварня Bières de Chimay была основана в аббатстве Scourmont в бельгийском муниципалитете Chimay в 1862 году. Пиво Бир де Шимэ производится исключительно из натуральных ингредиентов: воды, солодового ячменя, пшеницы, сахара, хмеля и дрожжевого экстракта. Вода для пива берется из чистейшего источника, расположенного внутри монастырских стен. Отфильтрованные твердые частицы пивного сусла перерабатываются в корм для скота, в том числе для коров, которые производят молоко для сыров Chimay. После ферментации пиво транспортируется из монастыря к месту розлива в 12 км от монастыря. После бутилирования пиво "возвращается" в монастырь, где проходит реферментацию в бутылках в течение трех недель перед отправкой в продажу. В 1988 году пивоварня была реконструирована, и сегодня новые мощности позволяют производить более 12 мегалитров пива ежегодно.
