Dorée (Gold) has been brewed inside the abbey walls since 1862 but was only available for the private consumption of the monks. They did not want to hurt local breweries who brewed light-drinking beers called Bier de Ménage or “household beer.” Thankfully in 2013, this drinkable Trappist style was allowed to leave the abbey walls.
Named “Dorée” for its delicate golden colour, this refreshingly crisp ale brings a delicious balance of citrus and spice. A fluffy white head releases the aromas of summer fruits followed by sparkling mouthfeel which ends with a hint of bitterness.

Chimay Gold ist ein klassisches belgisches Blonde und zählt zu den beliebtesten Braustücken aus ihrem Angebot. Der Sud präsentiert sich in leuchtendem Bernsteingold und weist eine zarte Trübung auf. Eine kleine Krone dichtporigen, weißen Schaums thront auf dem bewölkten Bier. Auf der Zutatenliste stehe neben Wasser, Hefe, Hopfen und Malz zwei Extras, die man bereits im Duft wahrnehmen kann: Floraler Hopfen trifft auf sanftes Getreide, spritzige Orangenschale und einen würzigen Hauch Koriandersaat. Cerveza de mesa de los monjes trapenses, obsequio para el personal de la abadía... Durante mucho tiempo, esta cerveza ha sido la bebida del cerradísimo círculo de los monjes y su entorno. Aprovecha la oportunidad de probar esta cerveza elitista, acompañada, por qué no, del queso del mismo nombre.
Presenta un color ambarino anaranjado, coronado por una espesa espuma blanca. Desprende aromas a malta, lúpulo, hierbas, caramelo, flores y frutas.
En boca, encontramos sabores a caramelo, flores, frutas, levadura, lúpulo y malta.
Se presenta en envase pequeño. Su contenido de alcohol es bajo. Se presenta únicamente en botellas de 33 cl y su producción está limitada a 1000 hectolitros por año. Solo disponible en bares exclusivos.
En cuanto al alcohol, comparada con las cervezas de la gama que tienen un 7, 8 y 9°, la Chimay Dorée se mantiene en un asombroso 4,8°. Más ligera que una Pils básica, con todas las ventajas de las trapenses.

Chimay Dorée nació como “cerveza de refectorio” poco después de la Segunda Guerra Mundial (alrededor de 1947), pensada para el consumo diario de los monjes por su menor graduación alcohólica. Se comercializó fuera de la abadía en 2013 en botellas de 33cl en Bélgica.
Ser elabora con el agua de los dos pozos del monasterio, malta de cebada, trigo, cilantro, lúpulo y levadura. Refermentada en botella
Estos rasgos hacen de Chimay Dorée una cerveza suave, fácil de beber y muy apreciada por su frescura.
Se recomienda servirla entre 8 °C y 12 °C en copa de tulipa para potenciar sus notas afrutadas y especiadas.
La Abadía de Notre-Dame de Scourmont fue fundada en 1850 por un grupo de monjes cistercienses llegados desde Westvleteren, gracias al impulso del abad Jean-Baptiste Jourdain y el príncipe Joseph de Riquet de Caraman-Chimay. Su lema “Ora et Labora” marcó el inicio de una comunidad dedicada tanto a la oración como al trabajo para sustentar y ayudar a la región cercana.
En 1862 los monjes elaboraron su primera cerveza de alta fermentación seguida de refermentación en botella, manteniendo inalterable su receta original durante más de 160 años. Esta producción se mantuvo siempre dentro de los muros del monasterio, distribuyéndose inicialmente solo en las fiestas de Pascua y para consumo interno.
