Chimay Dorée presents a vibrant sensory profile characteristic of a traditional Belgian Single. Poured from the iconic abbey, it showcases a pale gold radiance and a pillowy white head. The aroma is dominated by the signature Chimay yeast strain, yielding pear and citrus esters alongside a distinct herbal lift from coriander. On the palate, a delicate foundation of Pilsner malt provides notes of honeyed biscuit and crackery grain, which are quickly overtaken by spicy, floral Continental hops. The experience concludes with a crisp, bone-dry finish and a lingering peppery phenol, making this monastic table beer exceptionally refreshing and bright.

Appearance. Medium gold (4 SRM) with excellent clarity. Features a large, persistent, billowy white head that leaves thick, characteristic lacing on the glass.

Aroma. Moderate to high intensity featuring prominent Belgian yeast esters of pear, lemon, and light apricot. Distinct spicy coriander notes blend with peppery phenols. The malt backdrop is low, suggesting light honey and crackery Pilsner malt, complemented by medium-low spicy floral hops.

Taste. Initial flavor is light and grainy-sweet with honeyed biscuit notes from the Pilsner malt. This is immediately followed by a wave of spicy coriander and peppery yeast phenols. Moderate floral hop flavor leads into a firm bitterness. The finish is very dry and crisp, with lingering yeast character and hop spice in the aftertaste.

Mouthfeel. Medium-light body with high, prickly carbonation that enhances the dry finish. Extremely smooth with no noticeable alcohol warmth; very refreshing and effervescent.

Chimay vàng có độ cồn nhẹ nhất trong các dòng Chimay.

Chimay vàng là loại bia khá đặc biệt của Chimay cực kỳ hiếm, trước đây loại bia này chỉ dành cho các thầy tu ở tu viện của Chimay sử dụng, không bán ra ngoài với mục đích thương mại. Hiện nay, rất ít nơi phân phối sản phẩm này, trong số ít đó có Mê Beer.

Thành phần của bia được biết đến chủ yếu, như: nước, lúa mạch – mạch nha, đường, hoa bia, men bia, vỏ cam đắng và rau mùi tạo nên hương vị riêng mà chỉ Chimay Vàng mới có.

Bia có màu vàng óng ả trong suốt, được bao phủ bởi lớp bọt bia trắng mờ. Vị bia nhẹ nhàng và tinh tế, với hương hoa và một chút mạch nha hun khói và một chút đắng. Hương vị bia được tạo ra bởi hoa bia, một chút chanh (cam quýt) và rau mùi.

La Chimay Blonde n'est ni filtrée ni pasteurisée afin de conserver une méthode de fabrication la plus authentique possible et de garantir les qualités gustatives qui ont fait sa renommée. Le pétillant de cette bière exceptionnelle est entièrement dû à la réaction du sucre et de la levure. A la dégustation on retrouve des goût d’houblon, d’orge, de levure mais aussi des touches florales, fruitées et de caramel. The recipe remains unchanged from the beginning and they are transparent about the ingredients that compose the beers making this beer pour a dark straw yellow with a lasting cream head with hints of wheat, yeast, banana and some sweetness. La Chimay Doree è la belgian pale ale, la birra più leggera della produzione Chimay, prodotta inizialmente per il consumo all’interno del monastero. Dal 2013 è disponibile anche sul mercato ma non risulta sempre reperibile perché viene prodotta per quattro volte nell’arco di un anno. Di colore giallo carico, quasi torbida, presenta una schiuma fine e poco persistente. La Chimay Doree presenta un buon corpo nonostante un tenore alcolico moderato, e al naso offre sentori maltati, agrumati e speziati, di chiodi di garofano e coriandolo. E’ una birra ottimamente bilanciata, con un finale secco e dalla grande bevibilità, che la rendono ideale al consumo seriale. Rifermenta in bottiglia, come le altre birre Chimay.

La belgian pale ale è una birra ad alta fermentazione in stile belga, con carattere maltato e fruttato, incentrato sull’equilibrio e sulla grande bevibilità.

Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.

Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.

Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

Smaak Chimay Doree heeft een goudgele kleur en is licht troebel vanwege de nagisting op de fles, vooral merkbaar bij het inschenken van het laatste restje residu. Dit bier vormt een ferme witte schuimkraag met onevenredige luchtbellen.

Bij het ruiken van het bier, komt er een licht moutig aroma naar voren met tonen van geel fruit en een kruidige ondertoon van koriander en een vleugje witte peper.

De smaak begint fris en fruitig, met een herkenbare moutsmaak die vervolgens overgaat in het kruidige karakter van koriander. Het bier heeft een rijke koolzuurverzadiging, die zorgt voor een verfrissende prikkeling op de tong en het gehemelte. In de afdronk is er een lekker bittertje met een kruidige nasmaak.

Door het lage alcoholpercentage is dit bier wat dunner, wat het makkelijk te drinken maakt.
