Vigneronne represents a masterwork of spontaneous fermentation, bridging the gap between traditional Lambic and fine white wine. This Fruit Lambic utilizes hand-picked Italian Muscat grapes to introduce a luscious, vinous complexity. The sensory profile is defined by the signature funk of the Zenne valley—think damp hay, horse blanket, and aged oak—intertwined with floral grape notes. On the palate, the Muscat grapes provide a subtle, mellow fruitiness that tempers the assertive, puckering tartness characteristic of the Cantillon house style. It finishes bone-dry and effervescent, leaving a delicate trace of stone fruit and white pepper, embodying an elegant, rustic sophistication.
Appearance. SRM 3–5. Pale straw to bright golden yellow. Generally clear, though a faint haze may be present. Pours with a thick, white, mousse-like head that exhibits moderate retention and settles into a persistent rim.
Aroma. High intensity. Dominated by vinous Muscat grape notes and floral, perfume-like aromatics. Strong wild character with scents of hay, horse blanket, and damp earth. A sharp, lemony lactic acidity is present, underpinned by a faint aged-oak woodiness. No hop aroma is perceived.
Taste. A vibrant interplay of puckering acidity and elegant Muscat grape flavor. The initial impression is sharp and sour, followed by a nuanced fruitiness reminiscent of a very dry white wine. Complex fermentation notes of leather and straw are balanced by a low, bready wheat malt presence. Bitterness is nearly absent. The finish is remarkably dry and crisp with a lingering vinous aftertaste and a touch of oak tannin.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perceived acidity. Noticeable tart, puckering quality on the tongue without being overly harsh. Light tannic grip from the grape skins and oak barrels. Minimal alcohol warmth.
