Bush de Noël
This Winter Seasonal Beer presents a masterclass in Belgian intensity, delivering a deep copper-red hue and a complex, rounded profile. Dominated by the rich influence of roast caramel malts, the palate is greeted by a robust dark fruit character reminiscent of dried plums and cherries. Despite its massive strength, the beer remains exceptionally consistent and balanced, thanks to a six-week maturation process with whole hop flowers that imparts a subtle, refined floral aroma. The finish is warming and sweet, seamlessly integrating the high alcohol content with a lingering toasted sugar depth and a satisfyingly chewy, malt-driven complexity.
Appearance. Deep copper-red to mahogany with brilliant clarity. Pours with a thick, creamy, off-white to tan head that shows excellent persistence and leaves decorative lacing.
Aroma. High intensity with a complex blend of rich roast caramel malts, toasted bread, and dark sugars. Prominent dark fruit esters of raisin, dried cherry, and plum are supported by a subtle, refined floral hop character and a smooth, vinous alcohol presence.
Taste. Initial impression is sweet and richly malty, featuring deep layers of caramel, toasted nuts, and a hint of dark chocolate. Hop bitterness is moderate and carefully balanced to offset the malt density without being aggressive. Robust fruit flavors of fig and dark berries lead to a long, sweet, and warming finish that remains clean and remarkably consistent.
Mouthfeel. Full-bodied with a luxurious, chewy texture and creamy carbonation. Significant alcohol warmth is present but remains smooth and supportive rather than harsh. Low astringency.
