This Winter Seasonal Beer presents a masterclass in Belgian intensity, delivering a deep copper-red hue and a complex, rounded profile. Dominated by the rich influence of roast caramel malts, the palate is greeted by a robust dark fruit character reminiscent of dried plums and cherries. Despite its massive strength, the beer remains exceptionally consistent and balanced, thanks to a six-week maturation process with whole hop flowers that imparts a subtle, refined floral aroma. The finish is warming and sweet, seamlessly integrating the high alcohol content with a lingering toasted sugar depth and a satisfyingly chewy, malt-driven complexity.

Appearance. Deep copper-red to mahogany with brilliant clarity. Pours with a thick, creamy, off-white to tan head that shows excellent persistence and leaves decorative lacing.

Aroma. High intensity with a complex blend of rich roast caramel malts, toasted bread, and dark sugars. Prominent dark fruit esters of raisin, dried cherry, and plum are supported by a subtle, refined floral hop character and a smooth, vinous alcohol presence.

Taste. Initial impression is sweet and richly malty, featuring deep layers of caramel, toasted nuts, and a hint of dark chocolate. Hop bitterness is moderate and carefully balanced to offset the malt density without being aggressive. Robust fruit flavors of fig and dark berries lead to a long, sweet, and warming finish that remains clean and remarkably consistent.

Mouthfeel. Full-bodied with a luxurious, chewy texture and creamy carbonation. Significant alcohol warmth is present but remains smooth and supportive rather than harsh. Low astringency.

Brouwerij Dubuisson is opgericht in 1769 door Joseph Leroy, de oudste brouwerij in heel Wallonië. Het bedrijf wordt al 8 generaties lang doorgegeven en is ook nog altijd 100% onafhankelijk. In de tijd tussen 1769 en 1931 heeft dit bedrijf heel wat moeilijke tijden gehad, zo is het in bezit geweest van de troepen van Napoleon. Iedere keer heeft de familie Dubuisson het weer op gepakt en zijn doorgegaan. In 1933 brouwt Alfred Dubuisson een top Belgisch bier welke op Engelse traditie is gemaakt. Hij noemde het Bush Beer, het recept van dat bier is al 75 jaar hetzelfde. Tot op de dag van vandaag is de brouwerij erg populair gebleven.
