Brussels Beer Project Babylone

Babylone presents a unique evolution of the American IPA, bridging ancient brewing traditions with modern craft techniques. The inclusion of recycled fresh bread alongside Pale and Amber malts imparts a distinctive toffee and toast backbone that supports a robust hop profile. Bold dry-hopping with Chinook delivers aggressive pine and resinous notes, while EKG and Crystal hops contribute subtle herbal and spicy nuances. This deep copper ale balances its 7% ABV with a firm, lingering bitterness that defines its assertive character. The result is a complex, medium-bodied experience where savory bread crust meets the citrusy, resinous punch of New World hops.
Appearance. Deep copper to light brown (19 SRM) with a thick, persistent off-white head that leaves significant lacing; slight haze is present due to the high percentage of bread and dry-hopping.
Aroma. High intensity hop aroma dominated by pine, resin, and grapefruit from the Chinook, backed by subtle earthy and floral notes from EKG and Crystal hops. A unique, moderately-strong toasted bread and light toffee malt character provides a sturdy base.
Taste. Initial impression is sharply bitter, followed by a complex malt profile of crusty bread, toasted grain, and light caramel. Hop flavors of resinous pine and spicy herbs are prominent. The bitterness is high and firm (55 IBU), leading into a dryish finish with a lingering hoppy and toasty aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture likely enhanced by the bread starches. Moderate to high carbonation with a light, well-integrated alcohol warmth at the 7% ABV level.
