Surkörsbär har macererats i mer än 11 månader på ett- och tvååriga lambik, innan den blandades med ytterligare några tvååriga lambik. Lambiken kommer från tre olika fat och sex olika bryggningar. Alla spannmål kommer från 3 Fonteinens eget spannmålskollektiv, och hälften av humlen kommer från belgiska fält. Blandningens vägda medelålder är mer än tjugo månader. Den slutliga fruktintensiteten är 350 gram surkörsbär per färdig liter kriek.

Catalogue Bière 3 Fontaines Oude Kriek OW 12 x 37,5 cl Taux d'alcool : 6.5 % 73.97 € (Prix public conseillé htva) Ajouter au panier La Oude Kriek 3 Fonteinen est élaborée par maturation de cerises (pulpe et pépins) dans du lambic jeune. Ce processus dure entre 6 et 8 mois. Après la mise en bouteille, la bière mûrit pendant au moins 4 mois dans une chambre chaude où se produit une refermentation spontanée en bouteille. Le col de mousse de la Oude Kriek est très sensible à la concentration d'huile contenue dans les noyaux de cerises et peut varier légèrement d'une année à l'autre. Aucun arôme, édulcorant ou colorant n'est ajouté à la vieille Kriek 3 Fonteinen, ce qui rend cette bière très naturelle et surtout désaltérante.
