Ce processus dure entre 6 et 8 mois. Après la mise en bouteille, la bière mûrit pendant au moins 4 mois dans une chambre chaude où se produit une refermentation spontanée en bouteille. Le col de mousse de la Oude Kriek est très sensible à la concentration d'huile contenue dans les noyaux de cerises et peut varier légèrement d'une année à l'autre. Aucun arôme, édulcorant ou colorant n'est ajouté à la vieille Kriek 3 Fonteinen, ce qui rend cette bière très naturelle et surtout désaltérante.

A traditional Belgian lambic in which whole sour cherries (including their pits) are macerated on young lambic for several months, before being blended with even more lambic to reach a fruit intensity of around 35%.

The beer is then aged in bottles for at least five months, allowing a second fermentation to build complexity.

On the nose and palate you'll find vibrant dark-cherry and tart fruit, accompanied by subtle almond, oak, and cinnamon notes, balanced by a lively, creamy sourness and a warming funk.

Surkörsbär har macererats i mer än 11 månader på ett- och tvååriga lambik, innan den blandades med ytterligare några tvååriga lambik. Lambiken kommer från tre olika fat och sex olika bryggningar. Alla spannmål kommer från 3 Fonteinens eget spannmålskollektiv, och hälften av humlen kommer från belgiska fält. Blandningens vägda medelålder är mer än tjugo månader. Den slutliga fruktintensiteten är 350 gram surkörsbär per färdig liter kriek.

3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!
