Kriek lambic blendes derefter igen med mere ung lambic for at opnå en minimumsintensitet på 35% frugt, og tappes umiddelbart derefter.
Disse flasker opbevares derefter i vores kældre i mindst fem måneder, så kriek lambic kan udvikle sig til en smuk, traditionel og raffineret Oude Kriek. Med en behagelig syrlighed og organiske noter af mandel og kanel, mens den varmer i glasset, vil 3 Fonteinen Oude Kriek ældes perfekt, men kan miste nogle af de livlige røde farver og skovfrugtaromaer.
Denne ufiltrerede og upasteuriserede lambic er helt naturlig uden tilsat kunstig juice, sirupper eller sukker. Traditionel Lambic er levende, kulturarv forankret i Zenne-dalen!

3 Fonteinen Oude Kriek is het resultaat van het macereren van handgeplukte hele zure kersen op jonge lambiek gedurende ten minste vier maanden, in een verhouding van één kilogram fruit per liter lambiek. De kriek lambiek wordt vervolgens opnieuw gemengd met meer jonge lambiek om een minimale intensiteit van 35% fruit te verkrijgen en wordt direct daarna gebotteld. Deze flessen worden vervolgens ten minste vijf maanden in onze kelders bewaard, zodat de kriek lambiek zich kan ontwikkelen tot een mooie, traditionele en verfijnde Oude Kriek. Met een aangename zuurheid en organische tonen van amandel en kaneel terwijl het opwarmt in het glas, zal 3 Fonteinen Oude Kriek perfect rijpen, maar kan een deel van de levendige rode kleuren en aroma’s van bosvruchten verliezen. Deze ongefilterde en ongepasteuriseerde lambiek is volledig natuurlijk, zonder toegevoegde kunstmatige sappen, siropen of suikers. Traditionele lambiek is levend, cultureel erfgoed geworteld in de Zennevallei
