Пивоварня Bières de Chimay была основана в аббатстве Scourmont в бельгийском муниципалитете Chimay в 1862 году. Пиво Бир де Шимэ производится исключительно из натуральных ингредиентов: воды, солодового ячменя, пшеницы, сахара, хмеля и дрожжевого экстракта. Вода для пива берется из чистейшего источника, расположенного внутри монастырских стен. Отфильтрованные твердые частицы пивного сусла перерабатываются в корм для скота, в том числе для коров, которые производят молоко для сыров Chimay. После ферментации пиво транспортируется из монастыря к месту розлива в 12 км от монастыря. После бутилирования пиво "возвращается" в монастырь, где проходит реферментацию в бутылках в течение трех недель перед отправкой в продажу. В 1988 году пивоварня была реконструирована, и сегодня новые мощности позволяют производить более 12 мегалитров пива ежегодно.
