Para isso, decidiram fazer cerveja com a água em abundância disponível no planalto pantanoso, o primeiro batch foi produzido em 1862. Posteriormente, também passaram a produzir queijo, que é aliás o match perfeito para a Chimay. O conhecimento cervejeiro foi transmitido de geração em geração de modo a garantir que os princípios de Chimay são sempre respeitados. Hoje em dia é uma das 5 cervejeiras belgas que pode exibir o selo “Authentic Trappist Product”. Recomendamos vivamente uma visita à Abadia de Notre-Dame de Scourmont. Ficha Técnica

Chimay Rood is het oudste bier onder de Chimay bieren. Het heerlijke trappistenbier word gebrouwen in de Abdij van Chimay en heeft een prachtige koperachtige kleur. Het bier heeft een fruitige en zachte smaak. Ook is een licht bittertje te proeven in het bier. Vooral de geur van abrikozen is te herkennen. Het alcoholpercentage is 7%. Schenk dit bruine biertje op een temperatuur van tien graden Celsius.

Пивоварня Bières de Chimay была основана в аббатстве Scourmont в бельгийском муниципалитете Chimay в 1862 году. Для обеспечения своих потребностей траппистские монахи освоили искусство пивоварения и сыроварения. Благодаря высокому качеству и потрясающим характеристикам, продукция траппистских монахов стала популярна и любима во всем мире. Пятьдесят процентов пива под маркой Chimay продается на экспортных рынках.
Пиво Бир де Шимэ производится исключительно из натуральных ингредиентов: воды, солодового ячменя, пшеницы, сахара, хмеля и дрожжевого экстракта. Вода для пива берется из чистейшего источника, расположенного внутри монастырских стен. Отфильтрованные твердые частицы пивного сусла перерабатываются в корм для скота, в том числе для коров, которые производят молоко для сыров Chimay. После ферментации пиво транспортируется из монастыря к месту розлива в 12 км от монастыря. После бутилирования пиво "возвращается" в монастырь, где проходит реферментацию в бутылках в течение трех недель перед отправкой в продажу. В 1988 году пивоварня была реконструирована, и сегодня новые мощности позволяют производить более 12 мегалитров пива ежегодно.
